Shop Problem - pizza bases
« on: May 23, 2007, 07:31:54 AM »
Hi guys i own a small pizzeria called tele pizza in northern ireland. Im having a problem at the moment with my bases. The bases are all rolled from fresh dough but at the weekend its very busy and the customers are waiting too long because im having to roll lots of bases. I usually pre roll 20 bases before opening but they get used within the first hour and then i just cant roll fast enough because its so busy. Is there a way to store rolled pizza bases? I dont want to use frozen bases.
thanks in advance guys :)

Thanks for the info pete, i think im going to have to experiment with refrigeration. Unfortuneatley im very short on space so i think i'll have to use a standard refrigerator as opposed to a walk in cooler. if anyone has any tips on refrigeration rolled pizza bases id me very grateful :)
