Ever used one for a festival or other event away from your shop? Do they get hot enough?

Over the summer, I bought a pair of Bakers Pride 110V countertop ovens for a pizza event on Labor Day weekend.  I was very disappointed in the results.  The first couple of pizzas came out great, but the ovens couldn't maintain the 600 degree temperature in a production environment.  I probably should have figured this when it took 45 minutes to come up to temperature initially.  The first pizzas cooked in 6 minutes.  By the end of the night, it took over 15 minutes to get any decent browning on the top of the crust.  And even after that much time, the bottom of the crust was pretty much white.

Thanks for the help. Never thought about holding the heat. Looks like I better not try it.
