Anyone try it: Bake it at different temps

Anyone try baking a sicilian at diff. Temps?
Make a high absorption sicilian dough.
Start by baking it for two minutes at 360C or above for oven spring  then continue the bake at 260C for crispiness and complete thorough bake?

yeah you could do that. people do that with bread baking. high temp to get the oven spring then lower to fully cook it through till finished.
