So process went out of the window today, life got in the way.


As such, same day dough, no CF, RT all the way. Overall, worked out well all things given.

Wife wanted a calzone again.

I like the thin pizza with a nice fluffy crust at the end.
Scan the 5 pages but didn't see the actual recipe you are using.

So the recipe, I use PizzApp to calculate the yeast weight based on my timings and temperature. Hydration is 68%, salt is 2%. Then the methodology is a couple of pages back I believe.

We all decided we fancied a smaller crust. Itís nice to have a bit more control in the hand stretching process to have these options. Early on, it was you get what came out.

Usually the wife wants one. They are normally stuffed full of veggies and cheese.

Last nights. The trend for smaller but still airy crusts continued. Worked out fairly well. On one itís clear that I ended up push all the air to one side of the crust - whoops!

Well I polished off one Calzone, the wife ate half (other half lunch the next day) and the pizza was for the kids 👍

68% hydration. I have changed the dough ball weight to 250g. Previously I was using 290g.

Last pizzas is nduja, bloody lovely stuff!
