How much ADY for 3 days fermentation (72h) ?

Hello,

I'm looking to improve my pizza dough.

Generally I use 0.38% ADY with a dough I cold ferment 5 day in the fridge.

I want to try something new. I want to try 3 days of fermentation.

How much active dry yeast would you use for 72 hours fermentation ?

I use 0.5% for 1-2 days, so I'd guess about 0.45%

As yeast is supposed to be "sleeping" during CF, I just keep the same amount no matter how long my CF is. Simply because in commercial setting, CF is convenient to keep your dough longer if you have bad sales, so your dough that is supposed to be used at say 48H, you can also use it on the 4th or 5th day.

I use .2% for 24-72 hr ferment. Crust is light, rises well and tastes good. Your dough making process may influence how much yeast you use as well as the temp you ferment at.

I haven't done it yet, as I still have frozen dough, but will be going to .22% for 72h at 37F per the fermentation model.
