How long should i soak my steel

Hi i got this steel plate and want to know if i should soak it the full 48 hour, because many videos of removing rust from cast iron pan recommend just soak it for couple of hours or the vinegar will eat the pan, is it the same case for the steel plate?

Citric acid works better imo.

Removing the mill scale? Yeah, citric acid will work better. When i get around to buying a chunk of steel from my local metal vendor i will probably go the mechanical route with like 60 grit on a random orbital sander.

With that much rust, it's obviously going to need to be re-seasoned completely, so why not just use sand paper to get it down to a smooth, fresh steel surface?

Hi guys thanks for the replies i did soak it in vinegar for about 30h i didn't have citric acid on hand and the area i can sand the steel in it is quite far, it's clean now and seasoned with 2 layers.
