Cooked sauce recipe?
« on: March 11, 2022, 07:47:18 AM »
Hey does anybody find it necessary to use a cooked sauce for Sicilian? Perhaps because on Sicilian you need more sauce in order to flavor this thicker style of pizza. Or do you still use the raw crushed tomatoes? Please let me know because I've not worked with too many cooked pizza sauces. I'm interested in a nice sweet bright sauce and also maybe a good fra diavolo.

I usually parbake until the bottom is a light golden brown with just some sauce on top, which concentrates it.  I then remove the pizza and let it cool for a few minutes.  At that point you can add more sauce, cheese, etc,. or you can add cheese and put the additional sauce on top in whatever pattern strikes your fancy.
Things have never been more like today than they are right now.
