arturo’s pizza, york and 85th St, UES nyc

arturo’s is the kind of place I want to love, small, unassuming, the epitome of a busy, old school, nyc slice joint. Every time I walk by someone is ordering at the window facing out on york ave.  I dropped by one night for a slice and thought it very good but a little tough and hard to chew. last night, hoping to fix that flaw, ordered a whole pie well done and somehow it exacerbated the problem. also, the slices were a little soupy in the middle but still workable when folding.

besides the bake, a really nice slice, flavorful sauce and good melt. I've never had a nyc slice with this kind of flaw, locals don’t seem to mind, anyone have an idea what might cause tough pizza? I'm guessing dough wasn't fully fermented but really have no idea...

Under proofed, over proofed (doesnt look like that), over mixed, over handled while shaping are all the typical causes, but there are others.

we ordered another pizza from arturo's last night at 9:30pm, much better bake, maybe the dough had more time to proof. Still not a destination joint but if you're in the neighborhood, this was a solid, nyc slice.

I just happened to be walking by during a delivery, doubtful I'll catch another for some time but I'll keep an eye out or next time we order a pie I'll ask.
