I halved the recipe, and weighed the other ingredients.

397 g bread flour
255 g cool water
7.6 g salt
5.53 g sugar
2.33 g idy
3 teaspoons corn oil (didn't weigh)

Combine till it comes together, adding oil in three portions, then knead 4 min with mixer.
Proof 1 hour, then make two balls.
Cold ferment x 3 days.
Let come to nearly room temp, then stretch by hand (handles very nicely).

I was very surprised that I could get a chicago thin with 64% hydration. This makes me question everything now :-).
