How to use this?

How would I use this cheese for a NY style? Break it up and drain it overnight in the fridge? Just want to avoid the cheese soup effect!

Take it out of the bag and place in a colander in the fridge for a few hours with a plate underneath to catch the moisture then remove about 15-20 minutes before you are ready to bake

I cut it into disks and place them on my eyes.  I'm not sure it helps with the puffiness, but it feels good until they warm up to body temperature and ultimately please the dogs.  That, and what billg said.

Place two paper towels in a plate. Slice the fresh mozz about a half inch thick and place it on the towels. Place two more paper towels on top of the cheese slices.
Place another plate on top of the towels. Place a weight, like a can of vegetables, on the plate.
Put it all in the fridge for a few hours. The towels will suck up the extra moisture in the cheese.
