Thanks!  I have not received my cost yet from the metal shop.  I will post once we have it all set up with prices, shipping, tax.  I am being interviewed on this radio show 6/22  (will air a week or 2 later) .  It looks like the host has lots of depth with business dealings and I am going to reach out to him and the audience we will need help setting up a page on our smiling with hope webpage for ordering that will contain pricing, shipping cost calculator, credit card capability.  Judy and I are like newborns in this arena.

  • I finalized the coating we will reccomend for the unseasoned pans.  Here are the first bakes on a 1/4 pan.  The bake was even and release great.

Thanks!  It has been fun and pretty easy because we are replicating pans I have used for decades and know how they should bake.

Yes they are a game changer - even bakes/a once in 3 lifetimes purchase - something that Allied nailed in spades.  Those examples from today were on cut up pans which I used to figure out what oil worked the best for seasoning IMO.

  • Just took delivery of a baking steel and it reminded me of your much anticipated steel pan project. Hopefully still in development process.

It still is.  They are working on the metal bending around the wire on top.  Enjoy your steel  :)

  • A friend of mine has a machine shop and may be interested in making clones of the Allied Metal Pans that have gone out of business.   The 12"x12" sizes are no where to be had anymore, are much better for Sicilians IMO, and are the size we use in our pizzeria.  (photo of our pie baked in one)  the 12"x18" pans Winco sells do not brown the centers near as well.  If we can get enough interest he may make them.

You should setup a google form to keep track of serious people that want to pre-order. Happy to help you set it up.

Thanks for the kind offer but they are still working on the pan metal getting bent over the wire on top.  When we get that figured I will get with you.  Thanks!  Walter

I am still waiting on a final product.  The test pans on this thread were hand cut and bent.   They are trying to figure out a fast method and are doing it when they have time.  Their shop has exploded since the pandemic.  Hopefully it will get figured out soon  :)
