Title: Sourdough Malnati’s With Ghee

Inspired by a couple recent threads, one on using sourdough starter for DD (https://www.pizzamaking.com/forum/index.php?topic=59673.0), and another one about using ghee instead of butter (https://www.pizzamaking.com/forum/index.php?topic=30826.0), I decided to pull these ideas together into one DD.

12” pie
250g AP (100)
125g water (50)
25g corn oil (10)
25g ghee (10)
5g salt (2)
5g sugar (2)
100g freshly ripened sourdough starter at 100% hydration (40)

With starter factored in, the final hydration is 58%.

Room temp rise for 5 1/2 - 6hrs.

450 degree oven with two stones.  20 mins on the lower stone plus 10 on the higher one.

Half sausage/mushroom, half mushroom/garlic/peppers.  Hand crushed whole peeled canned tomatoes.  Sprinkle of basil, sprinkle of grated parm.

Results?
I will definitely make this again.  Perfect “emergency dough” for my needs.  The only thing I’d do differently would be to drop the hydration by accounting for the flour and water in the starter and adjust accordingly.

Notes on Sourdough
Obviously, if you’re a sourdough baker, you know that all starters are a little different, so YMMV.

And as some may know, because I mention it all the time (lol), I don’t like same-day dough aka “emergency dough” made with commercial yeast.  However, SD starter remediates those issues for me.
