I use about 550g for a 10x14. So 600 should be fine for your 11x14.

As Scott said, let it proof well. Be gentle when you top it so as not to deflate it. DS crust is nice and light.

did you use fresh yeast? or a substitute? Cant ever find fresh yeast here.

If you're near one of the Great Harvest Bread Co's there they may sell you some. Here in MI they always do.
