It's been a few years for me but I recently revisited making croissants.   Making croissants in the summer heat is a challenge and a half.   Had to come up with some creative ways of keeping the work bench and rolling pin cool.  Dough temps are obviously critical to the process.  My latest batch.

Some more recent croissants.   Hard to decide if I like the more open or less opened crumb structure.    Both are very good though.

Craig, I deep fried a few and they were fantastic.  Super crispy and super soft and tender.
