I agree with Fiorot! Restaurant Depot has the big #10 Cans of Escalon 6 in 1 ground tomatoes at a nice price, but NO Grande products in Wisconsin or Minnesota.

They may have some good cheese but I will hold out for Grande. Maybe it is just a home state thing for me, but that doesn't explain why so many New York City parlors use it.

That question is simple.  have you considered the amount of Pizzerias on most blocks in NY and the Tri State area make NY Pie? and use this cheese?

when you go to restaurant depo can you buy just a single block of grande or a single 5 lb bag or do you have to buy the full case.

as fiorot indicated... No grande at RD..... Not in NC.
They have probably closer to 10 different sizes/types of mozz and you do not have to buy case size.

Thank you, thank you, thank you and a virtual bottle of your favorite. Went to Endico and had a great time. Had individual bags of Grande skim, whole milk and East Coast blend as well as the blocks. They also had small containers, about 6oz each of shredded whole milk. A bit more expensive but still cheaper than Boars head. Picked up 3 to try this weekend and if I like I'll get the 5 lb bag and portion and freeze. Is the East Coast blend something that a lot of people use? I see on their website they also carry the ched/moz/prov blend. Didn't see on the shelf so might have been lack of space. Suggestions appreciated.

Glad you liked it !   As for the 3 cheese blend I found a bag once when I went back the fellow said you can only by a case of 6.  So I add one ounce of provo and one ounce of cheddar to 8 oz of the WM.   The East Coast Blend is a favorite of NY Pizzerias as it does not pool like the WM if too much is used

I can't even buy Grande cheese, unless I go to Bova Foods or Reading because I am not a big enough pizza business (unless I would buy a large amount and then freeze it). I would need a big minimum order to be able to purchase Grande cheese. If I want a small amount of Grande cheese, I have to buy it from some of my larger pizza businesses.  I pay 5.00 a lb. when I buy it at our local pizza shop.
When I first started my small pizza stand, I did purchase all Grande cheese from a local pizza business and he gave it to me for the same price he paid for it, but wouldn't give me a slip that I purchased any.  That was the reason I stopped buying the Grande for my market stand.  I since have found I do like other other mozzarella cheeses that can be purchased from distributors.  If I have leftover grated cheese from one week to the next, the other mozzarella cheeses hold up better than Grande, at least for me.

Go into Bova and order a Case of Grande WM Shredded cheese.
Yes you will need to buy a whole case of 6 5lb bags and the cost is around $105(Last time it was around $86}
Bova will ask you if you have a account,just tell them NO but you do have a restaurant that makes pizza...…….JT

Thanks for the reply johnnytuinals and making me aware of this place I actually stopped in there today on my way home from work. I just asked the lady who was very friendly btw at the register and she rang it up for me no questions asked. Got the 6-5lbs shredded for $96 better than what I was paying online. Also got some fresh yeast for $1.90 which I couldn't find anywhere else. How long does the shredded cheese last in the fridge?

The loaf was around 6lbs, and it was around 18$+/-.. I’ll be back for a reload in 2 weeks, and will reply with exact cost.

I use the Shredded up too 30 days and put the bags in the Freezer till I need one.
Yes I do throw away 1/4 - 1/6th of the old bag about 30 days old but at these prices who cares....JT
