quick leftover dough lunch pizza  (working from home perk)   150 gram dough, launched about 900.   Vermont smoke pepperoni ,  oregano .  Mikes Hot honey post bake (not in picture).   this is eating very nicely

It's been over three months since i have made any pizza.  The passione has her cover on and is coated with over 1/2 inch of ice so these were baked inside on a stone    About 9 hour dough   Urban special flour , HR 63%, salt 2%, ldm 2%, sugar 1%, olive oil 2 %, idy.   First one is buffalo mozz, roasted garlic, italian chicken sausage, roasted red pepper & broccoli.  Second one is pepperoni

A couple from tonight      Caputo pizzeria  HR 60, Salt 2.5%  IDY   24 hour rise at 60 degrees

1.  Lemon, shallot, broccolini, buffalo mozz
2.  Ezzo pepperoni, napoli foods krema dry mozz

I didn't check the floor temp and I didn't time
