On A Crusty Quest

Like many of you, I'm on a spiritual journey to unlock the secrets of the perfect pizza dough. Not sure when I'll find it but I'll document my progress here for posterity. I'm about 30 cooks into this quest, this latest bake used Tony G's master dough + starter recipe, cooked on an Ooni Pro. I had to modulate the oven temps to keep the heat down and extend the bake time. If I had to do it again I would have rolled out the dough thinner. Overall i'd give this one a 7.5, dough was easy to handle, good structure and chew, taste was good too.

Hey, how's it going with your quest? Looks like you started something here and didn't keep documenting. I'm still going with my Ooni Pro, but haven't been highly satisfied with it. Do you feel like you're coming along with yours?
If we're not questioning the reason for our existence, then what the hell are we doing here?!
