Title: Tom Lehmann has Passed Away
Post by: Brian Hernandez on December 12, 2020, 09:32:33 PM
I was informed today by Tom "The Dough Doctor" Lehmann's wife that he passed away this afternoon from his battle with Covid. He was surrounded by family. Her message was very short.

"Tom passed away this afternoon. He is with the Lord now."

Tom was the most knowledgeable, selfless, professional in our industry that I have ever had the honor of knowing and working with. He was a great friend and always willing to help with anything. He never belittled you for you ignorance or lack of knowledge about a topic. Instead, he would make sure you walked away understanding it very clearly.

As anyone who got to meet Tom or spend any time with him knew, he always had a story for every occasion. Forever the epic tale teller, his stories were always full of important information which made them worth listening to every second of. He will be missed and forever in my heart and the heart of our industry.

God Bless Tom. You will be missed my friend. Light those ovens in the sky and save me a seat at your table. You better have some bread ready for when I come knocking.

Thank you, Brian, Iím so sorry this is how it ended for the Doc and his family. What a terrific photo you have to remember him by! He leaves behind a tremendous body of work and legacy like no other. Yet, knowing him only by his exchanges here, I sense these things were 3rd or 4th on his list of Ďthings that are important to me.í

If any of us are not better bakers than we were before first hearing of Tom and reading his posts, it's our own fault. This is a sad day for his many friends and followers here.

Such very sad news.   Condolences to Tom's family.

Early on in my time on this forum Peter was working on the "Tom Lehmann's NY Style Pizza" thread. Tom's formula & Peter's work with it really helped improve my pizza making.  I have taught some friends to make pizza with Tom's formula.  So while I haven't had any direct contact with Tom he is a very large influence in my pizza evolution.

Thank you Brian for keeping us updated.

I was very saddened to hear of Tom's passing and, I, too, would like to extend my deepest sympathies and condolences to the Lehmann family, including his wife Sue and their sons Jerry and Tim.

I would also like to thank Brian for keeping us informed of Tom's situation and for his nice and well deserved eulogy of Tom. Tom was one of a kind and is unlikely to ever be replaced.

I first heard of Tom about 25 years ago when I discovered the PMQ Think Tank and also the Pizza Today bulletin board that was later disbanded. I read and studied whatever Tom posted on the two forums and I also read and studied the many articles and Q&A pieces that Tom wrote for PMQ and Pizza Today. These were later followed by videos that featured Tom and his former associate at the AIB, Jeff Zeak, and others. I never met Tom personally but I always considered him to be my mentor because of all I learned from him. Even after Tom became very active on our forum, after he had retired from the AIB in 2014, after almost 50 years of service to the AIB (he was their longest tenured employee ever at that organization), I continued to learn from him. Because of Tom's extreme depth of knowledge, I made a point of citing Tom's knowledge for the benefit of the members of this forum. I have done that hundreds of times. But Tom on his own became one of the forum's top ten posters, with 6897 posts.

For those who may be interested, along the way I came across a Who's Who article at Pizza Marketplace that did a nice job describing Tom's background and career up to age 58. I believe that that article is well worth reading. It is at:

Rest in peace, Tom.

Even though we knew he was sick in the hospital, I am still shocked to hear he has passed away and I simply don't want to believe it.  He was more than just knowledgeable about pizza and baking.  He was generous with his knowledge and tireless in answering the endless questions that came his way.  He was always polite and kind and had a great sense of humour.  He was simply a good man.

I send my heartfelt condolences to his family and friends and I hope they can take some solace in knowing how he touched so many lives.  I will treasure all his contributions to the forum, but most of all I will treasure the memory of his friendship and camaraderie.

Earlier in this thread, member Dmitri asked if anyone knew what Tom's favourite pizza was.  I once started a thread asking Tom if he ever got tired of the whole pizza world and if he would also share with us his favourite pizza.  I think his answer says more about his character than anything else:

Quote from: The Dough Doctor
Rolls;
Occasionally I get those feelings but then I'm reminded that there are so many new things happening with pizza and so many people in need of assistance that I quickly put those thoughts to rest and jump right back into the pool and seldom ever look back or have any regrets. I'm always up to trying one more slice because I'm afraid I'll miss something if I don't.
As for my favorite pizza, I'd have to say it's AJ's New York Pizzeria, Manhattan, Kansas. I have to admit that I'm partial to it because my DNA is all over the pizza as well as the pizza concept, so if I don't like it I only have myself to blame. I have two favorite pizza chasers, if I'm driving it's a large, cold root beer. If I'm not driving it'll be a tall Guiness Stout  ;D
I've always considered it an honor to be able to participate in sites like this as well as the PMQ Think Tank and to be asked to participate in Pizza Expo (don't know how many years I've done P.E. but it's been most of them).
In the end, my own personal rewards come when someone writes me or approaches me and starts the conversation by saying "You probably don't remember me but your advice helped my get my store off the ground"......what more can one ask for?
Tom Lehmann/The Dough Doctor

Rest in peace Tom.  I will miss you dearly.

Rolls,

I agree with you completely. I also observed over the years that it was hard, if not impossible, to rattle Tom. And he never attacked anyone. Those were qualities of character that I admired and tried to emulate on our forum after I was asked by Steve to be a Moderator.

I should also note that Tom thought highly of our forum. For example, in the middle of a thread that had nothing to do with his personal views, he wrote the following:

I've visited a lot of different type of forums over the years and one thing that I can attest to is that pizzamaking.com is one of the most sharing (by all participants), respectful and civil of all the forums.........Pizzamaking.com, if not already, is well on its way to becoming the most recognized collective authority for knowledge for the home/hobby pizza maker in the world which is quite an achievement for all at Pizzamaking.com!

Just let me add my sentiments.

He dutifully and patiently answered questions I posted, which to him, may have been redundant or those of someone just blurting out inquiries without truly thinking, and likely beneath his level of expertise. But when he did, it always struck me that, on  this forum, I had the chance to get my posting answered by an ultimate authority and someone with vast knowledge of his field. That he took the time to answer me was special. One doesn't often get that opportunity.

I saw this notice and said out loud, "Oh, no!" RIP, Mr. Lehmann, you will be missed.

When Tom dropped off the forum a few months ago, we were all tense with worry and fearing the worst, but he came back. Ever since the news that Tom was battling Covid, I have been dreading every day that he was out. But recalling his robust personality and his love of the staff of life, I was confident he'd again recover and return to his family and to us, his huge extended family. Losing him and having to refer to him in the past tense is particularly cruel as it comes at the threshold of the vaccine's arrival. It's hard to see how we'll carry on without him, but I know he wants us to, and that he has left us a magnificent legacy to follow. His kindness and his impact upon us and the world of pizza are simply inestimable.

I never met him, but his generosity with information and willingness to help people were very apparent in the years I've browsed these forums. He helped me by responding directly to questions I had for him, and by responding to the questions of others.

I am very saddened by this news and wish the best to everyone who is left mourning the loss of a good man.

Was very saddened to hear of Tom's passing.  Tom contributed so much to the pizza and baking world.  He was kind enough to help many people around the world and a lot of people here on the pizza forum.  I was only one of the people that learned so much from him, here on the forum and at the PMQ think tank.  Will be forever grateful for all Tom taught me.  Was also fortunate enough to meet Tom in Vegas.  Walter and I talked to him for awhile about many things.  Tom was the kind of man that anyone could learn a lot from and was a great teacher.

Condolences to Tom's family.

Thank you Brian for keeping us informed.

Rest easy Tom

Tom definitely never "Retired", and if so, he was the hardest working retiree I have ever met. You can't quit your passion, regardless of your age. Thanks for the info and link to that article Peter. I am not surprised he was the longest lasting employee at the AIB.

Maybe someone could check with the family and see if there was a favorite charity of his that we could make contributions to in his memory.

Best.... Steve

Absolutely. I have reached out for more info. I know they will be managing numerous well wishes from everyone so I will await their response. I do not want to overwhelm them at this time.

Pardon my French, but 2020 has been a beyond sh*tty year. I'm relatively new here but since I found the site I'm on here a lot.   Only had a few question interactions with Tom, so I didn't know him personally. But even with just him responding to my silly questions it was easy to see that he really was as nice as people say.  A year ago I technically knew how to make a pizza, but reading all his write-ups and asking him questions. I now feel like I understand the process and my pizzas are legendary with some of my neighbor's thanks in big part to him. I am saddened for someone I really didn't even know. Which says a lot about how he was, prayers to his family and all his friends. He was legit that guy when it came to pizza and baking.

We could even make a pizza book gathering (most of) Tom's posts here + PMQ, that would be something amazing. But a huge work to do... maybe one day someone among us will?!

To quote one of his recent reply to one of my posts:

I have been 'off the grid' for a few days, and came back to this sad, sad news.

Being an eager novice here, I was struck by Tom's helpful and kind demeanor.  When I started posting on this site (after a long period of just reading), I posted some questions on the newbie page (feeling that my questions were too stupid to bother an expert with), and felt honored that Tom jumped in on a handful of those threads - not being 'too good' to help with something that I am sure many dozens of experienced pizza makers here could answer.

I had never really thought about it until now, but I am struck by how generous Tom was on this site with his time and knowledge, considering he was not doing it because it was 'his' site or doing it because it was his job - he was just doing it to help others.

The recent past has become challenging in so many ways.  I found that I had to turn my back on many things that used to give me solace, as they have tried to become more than what they are.  This site remained true to itself.  It is still about flour, water, salt, leavening, etc. and it is about helping people be successful - either with their hobby or with their business.  We all owe Tom a debt of gratitude for being one of the pillars on which we could rely.  Thank you, Tom.

PMQ Pizza Magazine posted this yesterday.

Tom ďThe Dough DoctorĒ Lehmann Passes Away from COVID-19

Whether you ever met him or not, if you were a pizzeria operator, Tom Lehmann was your loyal and trusted friend.
Tom ďThe Dough DoctorĒ Lehmann passed away on Saturday, December 12, after a lengthy battle with COVID-19.
Recalling Tomís life and unparalleled contributions to the pizza industry, a famous quote by Sir Isaac Newton springs to mind: ďIf I have seen further, it is by standing on the shoulders of giants.Ē Tom was, like Newton, a scientist, with an almost encyclopedic knowledge of the chemistry and physics that underly the dough making and baking processes. And in our industry, he was a giant. Itís safe to say that countless pizzeria owners and pizza chefs have gotten far in this business by standing on Tomís shoulders.
Read our January 2015 cover article on the Dough Doctor titled ďBorn to Bake: Tom Lehmann Has the Cure for Whatever Ails Your Pizza ď
As the director of bakery assistance at the American Institute of Baking, it was Tomís job to solve and help the layman understand the mysteries of flour, dough and fermentation. His tenure at the AIB lasted nearly half a century, from 1965 to 2014, during which time he developed new programs, taught numerous classes and seminars and consulted for foodservice clients around the country.

Tom got paid, of course, for his hard work, and no one ever did it better. But it wasnít all about money for him. Starting with PMQ Pizza Magazineís first issue, he contributed hundreds of columns and articles about dough and never charged us a penny. As his busy schedule allowed, he was also a frequent contributor to our Think Tank forum, answering usersí questions about everything from bakerís percentages and par-baking crusts to cross-stacking dough boxes.
Additionally, he traveled several times to PMQís office in Oxford, Mississippi, and sat down for interviews, recipe videos and photo shoots. Always easygoing and friendly, he patiently answered every question we posed to him and tirelessly endured the ofttimes frustratingly slow process of setting up cameras and lighting, tinkering with microphones and running soundchecks. When he wasnít speaking to the camera about pizza dough, he delighted in regaling us with corny humor, the cornier the better, smiling that winning smile all the while.
After he retired from the AIB, Tom continued writing his columns for PMQ (he never missed a month) and advising and helping PMQís readers. And, again, he did it all for free. He didnít have to do it. He did it because he loved it and because he genuinely cared about the success of each and every pizzeria owner who reached out to him. Whether you ever met him or not, if you were a pizza operator, Tom Lehmann was your loyal and trusted friend.
Burly and barrel-chested, smart and strong, he remained physically active and mentally sharp in his so-called ďretirementĒ years. He seemed damn near indestructible. But none of us are that. Even so, Tom left us too soon. Itís hard to imagine the pizza industry without him. Itís hard, in fact, to imagine the pages of PMQ without him. We are deeply and forever grateful for all that he did for our industry. And our hearts are broken by the loss.

This forum is a prime example of the absolute best the Internet can be. It connects people around the world who treat each other with respect, are helpfull, share their knowledge with others and make it free available for those who come after.

There are a lot of great people here and Tom ďThe Dough DoctorĒ Lehmann was one of them. Someone who was happy to share his expert knowledge from over 50 years of AIB (american institute of baking) with the community every day. - Rest in peace.

Great memories and his writings will live on.

Regarding the "Ask the Dough Doctor" file, I think it should be locked to members as Tom cannot respond and remain a reference file.  If more of his writings become available the moderators should be allowed to add them.

Oh wow. I haven't been on the forum for about a week... in my mind, I was thinking, I NEED to get back on to see how Tom is making out. Then I login to see this thread.   :'(

It was like my heart sunk in my chest... all I could say was, "whoa". It was like someone I had known for a long time had passed away. I joined this forum 5 years ago I think it was... and came here before that to read things about pizza. I asked Tom MANY questions over the last 5 years and he's helped me so many times. My pizza is 500 times better than it was before! I still cannot believe this.  :(

My condolences to the family, if they ever read this.

A pizza, accurate dough percentages, sauce, and toppings. It would also be nice to have stories shared by those that were lucky to have interacted with him. I have not read this thread so please excuse me if these topics have/or are being discussed. My condolences to the Lemann family.

Very sad. Rest in peace Tom. As others have pointed out Tom was always extremely generous in taking time to help out anyone, including a nobody like me when I first wanted to try making pizzas at home. He will be missed.

After the passage of a fair amount of time after Tom passed away, I decided to check the Pizza Today website to see if that company had a column or article or even an announcement letting their readers know that Tom, who had created countless articles for Pizza Today, was no longer with us. By contrast, the folks at PMQ had informed its readers of Tom's passing very promptly.  To check on Pizza Today, I did a search at their website to see if I might have missed an article or announcement of Tom's passing. In order to do the search, I had to register. I got nothing from my search. After more time passed, during which I did more searches at the Pizza Today website, and coming up empty, I decided to simply send an email to Pizza Today, using the link at the Pizza Today website. I let Pizza Today know of Tom's passing, given the fact that he had played an important role at Pizza Today through his many contributions to Pizza Today for many years. My email included an obit link. I waited to see if I would get a reply of any sort. I got nothing. But I still did searches from time to time and came up empty.

Finally, today, after doing another search, I got a link to what appeared to be the missing article that I had expected for the many weeks following Tom's passing. Here is the link:

I want to pass along my sincere condolences to Tom's family.

I haven't been a poster in this Forum but after seeing Tom's passing, I just wanted to pay tribute to him and share a quick story about Tom's generosity of spirit!

I contacted Tom many years ago when I was having issues with my pizza sauce.  We immediately struck up an email correspondence over our shared love of Chicago pizza and Tom was nice enough to help me with some pointers.

I had a niece that was married and her husband was in the Army and stationed in Kansas.  They lived in Manhattan, KS where Tom had lived and worked at AIB.  When my niece's husband was deployed overseas, my wife and I had planned to visit my niece so I let Tom know.  He immediately offered to take me to his favorite pizza places in and around Manhattan.  He didn't know me beyond our email correspondences but his generosity to invite me to go eat pizza with him just blew me away!  Work circumstances and weather prevented our visit and now with Tom's passing I am so sad that we didn't get to go on a pizza exploration together.

In the Greek community we have an expression when someone passes, "May their memory be eternal".  Our remembrances of Tom and his lasting words on this Forum will always make his memory eternal.

This hurts to hear. Tom helped me on my pizza journey more times than I can count and I'm going to miss him. He lives on in the knowledge that he's shared with all of us. Every time one of our slices puts a smile on someone's face, Tom made it possible.

Have not logged on here in long time, Saw Tom's passing in PMQ and felt I had to post one last time.

My sincere condolences to the Lehmann family, my heart is feeling your loss also.  Tom's passion for the hobbiest indicated his own passion for Pizza and the broader Pizza world.  I learned to make proper pizza from Tom many years ago when I began a literature search on  commercial pizza dough.  His writings on dough were authoritative, understandable, and always useful in the real world.

Tom's presence here, on this forum, shows his true passion, not just for pizza but the individuals who shared his love for pizza.  That is the true telling of the man, he loved people and just wanted to humbly help whomever he could.  I'v tried to emulate this in my own life but can never come close to being as loving as Tom.

You Will be missed my friend. You helped me in a time when I needed it and now I can never deliver the Thank You I always wanted too.

Rest in peace Tom, I know the Pizza in heaven will be better if I can get there because of you.

What suprised me was how willing he was to give detailed help to us amateur pizza makers and genuinely wanted to help which from one stranger to another is a rare trait these days .Personally he helped me replicate a pizza place I used to like as a kid. Im really sad to be learning that he has passed away I hope his family get though this difficult time

I recorded this song today - one year of Covid 19 -  reflecting on the past year of Covid 19.  I thought of Tom while doing it.  I make up all words as I go along, play all instruments at once -the drums on my feet, guitar, harmonica, vocals, and call it Spontobeat .

Tom's depth of knowledge and experience is extraordinary.   But there are many knowledgeable people around that we don't hear about.

What made Tom so very special is how he patiently coached beginners like me ... week after week on this forum.

We were fortunate that we found him and he found us.

We are also fortunate that we have other members here that share their time and experience.
I'm grateful to all.

There have been multiple times I've thought.. man... I need to ask Tom about that. Then thinking, no, I can't. He was so willing to answer questions. Not many people as kind hearted with their knowledge as he was.

Wow. I have been absent from here for some time due to health issues and just today heard of Tomís passing. I only had the opportunity of speaking with Tom here a couple of times but he was always ready to offer words of encouragement as well as help and I know how he has helped so many others. I know he will be greatly missed.
