First time sourdough pizza (first time sourdough anything), quite pleased with the results.

75% Ardent Mills pizza flour, 15% Five Roses A/P, 10% Spelt. 63% hydration, 1.5% sourdough starter, 2% salt, 1% oil, 0.5% diastatic malt (200L), fermented at 65F for 45hrs, re-balled with 18hrs remaining.

Baked at 535F for approx. 8min. Doing the 2 stone method, pizza on a screen on top stone (2nd position from top) for 4 min, first 1.5min broiler on high, move to bottom stone (no screen) for remaining bake.
Very nicely done!

Made pizzas for one of the downtown brewery last nite, i didn't get chance to take more pics of better looking pies since we were super busy.
63% hydration, Double zero, spelt, SD. 39 hrs ( 30 bulk). fresh basil pesto, pepperoni, candied Jalapenos etc.

Yes I am a polish guy in Germany

This is a Weizen from a small brewery in Bavaria called Hopf

This Weizen is soft, well balanced, without bitterness

After 5-6 bottles bed is calling 😅

Ordered an Ooni Fyra style oven for 80 bucks. I still need more practice, but for an oven that cheap Iīm already kind of happy with the results.
Friday morning. You had a hard week and the day ahead of you is long. But then you remember: you're going to make and eat pizza tonight. This is going to be a good day.

I think itíll taste better than the picture depicts.
Figs, Prosciutto, Gorgonzola on a bed of jammy carmelized onions.

I did 1 lb of dough. Then I rolled out a circle for the base. Then I made two three strand braids, put them around the edges, and braided them together.

After proofing, topped with sauce, 8 oz mozzarella, kalamata olives, zaatar. Added the tomatoes part way through the bake.

Baked on parchment in a pan for 25-30 min at 350 Fahrenheit.

First bake using a rotating pizza stone gadget in my bertello grande.

Few more things to fine time, this looks promising!!
