Does Salt Affect Elasticity?
« on: May 05, 2022, 12:07:31 PM »
My dough doesn't always stretch as much as I would like.  I realize there are many factors that contribute to this, but today I'm wondering about salt.  A well meaning friend advised me to increase the amount of salt.  Does salt have any meaningful affect on elasticity?  If so, what percentage is recommended?  Thank you.

It does have an affect.  Start with 2.5% and see how you like it.

Carbo,

FYI, there are several posts and articles that discuss the role of salt in pizza doughs at Reply 4 at:
