advice on buying a existing pizzeria

i got a great deal on a pizzeria and want to know the legal part of the business. for example to get my food establishment permit i would first have to buy the pizzeria then close it down for 4-6 weeks then get the permit then reopen it? i wanted to buy it and run it next day but do i have to close it down? also besides a corporation what else would i need to get in the right order and what licenses/permits can just change names when i buy the place

Who told you that you had to close? What state are you located?

i don't have to close the place down but i do have to work out something with the owner in order to get the food establishment people there the same day i buy the place or something like that. they won't let me run it until the place is inspected so that would mean if i buy it now i would have to close it down or work something out with the owner as i was saying. you have to own the business for them to come but then have to wait around 21 days for it to get inspected. its just the people on the phones send you from one person to another not wanting to deal with you meanwhile confusing everything.
