Remco Millennium 2000 for food truck

so, I was trolling Craigslist the other Day and found a Remco Millenium 2000 for sale for dirt cheap. I know they are very expensive and have a lot of issues, but this one is almost free ($500). It looks like it has seen better days and probably needs repairs, but it seems quite ideal for a food truck due to its fairly small footprint and the carousel stone. It can also fit 3 20" pies which is the size I would like to make. It would also allow the ability of single-handing the truck until I could afford to pay a cashier.

I know there isn't a lot of info on them and some of it is bad, but I am just trying to get an idea of if this thing could work, or what other ovens (that don't cost an arm and leg), might work. Size is an issue because the area I am in has strict size requirements of length and width of the truck and it is not very generous.

Maybe mod the oven somehow? I'd love to add Coal to the mix even if it is just for slight flavoring and marketing. I'm just thinking out loud and would love any feedback from you guys.

Oh, and I would like to make NY style if the size and coal didn't tip you off. I am unwilling to use a conveyor oven...
