Although you will probably get answers to you're questions here faster than any pizza site on the web. I can suggest you take a look at
www.PMQ.com, on the right side of the page under IDEAS and RESOURCES is PIZZA MANAGERS TOOLBOX. Under this icon you will find all types of intersting information on the pizza business. There are also CDs like Pizzabusiness101 on EBAY for sale. This CD gives lists and estimated equipment cost new and used. Food cost,P&L charts, recipes. Its not the best but not that bad either.
