Hello Everbody,

This is directed toward the folks who operate their shops here in the midwest. And I assume everyone is different. But I'm curious about how many pizza's are sold in a day. What are the most popular days and how many. I've been playing around with the idea of having my own shop. I have done a few pizza parties for family and friends and everyone encourages me to do it. It has become a passion that I think I might want to do.

So now I'm doing a little homework to kind of get the idea of what my operation and cost would be. I appreciate you answers.

Thanks,

Tim

Tim,

For general background purposes, you may find this report of interest: http://www.pmq.com/mag/2005september-october/pizzapower.php.

Tim,

Here's another source of information on Midwest (and other) retail pizza operations, including a few in Wisconsin: http://pizzatoday.com/downloads/Oct05Hot100.pdf.

I think the best you can hope to get in the way of daily/weekly/monthly pizza numbers is averages since different pizza places have different hours and days of operation, different peak periods, and there are different mixes between delivery, takeout and sitdown, and location (e.g., big city versus small rural) and demographics and marketing can play a significant role in volume. Unfortunately, averages don't always present a clear picture of what any individual pizza operator can expect to achieve. To give you an example, when I was in NYC recently, the chief pizza maker at Naples 45 told me that he does several hundred pizzas just during the lunch period alone. Naples 45 is in the MetLife building near Grand Central Station and does a big business with local office workers. On the other side of town, at Una Pizza Napoletana, Anthony Mangieri told me that he does about 100-125 pizzas (Neapolitan) a night. However, he is only open a few days a week and for only a few hours a day.

Pete,

Like I posted earlier, I'm trying to educate myself toward possibly having a shop of my own. And you hit a point that I was thinking of. I went to a Cubs baseball game this last summer. And after the game we walk around to take in the flavor of Chicago. Well, we ran into a hole in the wall pizza joint. Which I had to check out. He hardly had any advertising out front. Almost walked past it. But the guy was packed.

So when I went to go get a slice, I had a chance to talk to the operator. And he said he sells hundreds of pizza a day. But like you mentioned, he's only opened for the lunch crowd.

So who knows, maybe I can do something like that.  But right now, I'm working on a business plan, experimenting, and learning a lot of great things on this web.

Thanks again Pete.
