Advice for mall food court pizza
« on: December 05, 2020, 09:24:16 PM »
The pizza place at my local mall food court just closed and I am taking over their space.  My original food concept didn't include pizza, but all the big equipment is still there and in great condition and the mall management would like pizza available at the mall, so I'm adding pizza to my menu.

I expect most sales will be impulse buys, so I'm not looking for "Wow, that was the best pizza I've ever had!" but more for "That pizza was pretty good" and "I would definitely consider getting pizza next time I come to the mall."

I've been reading a lot on this forum and it seems to me to be able to offer whole pies as impulse buys, I would need at least one extra employee, if not two, just for pizza.  The mall is not so busy.  Even before Covid it wasn't the most hoppin place so I'm very hesitant to hire too many employees.  My initial thoughts are that I will offer reheated slices as impulse buys, and full pies have to be ordered way ahead of time.  There are a few places at the mall that people have parties, like a bounce house and places where you can paint ceramics and other stuff.  So I'm thinking I will offer pies in case people want to have pizza at their parties.  But they will have to order them ahead of time.  If people want a whole pie on impulse, they can buy 8 slices, but it will be more expensive than a pie obviously.

Sooo... I have a few questions.
1.  I'm not sure which style pizza I should offer.  I'm in the Chicago area.  Maybe thin Chicago style would be OK.  From all the styles, are some better than others as reheated slices?
2.  What temperature are pizzas waiting to be reheated as slices kept?
3.  How long can cooked pizzas be kept that way before their reheated slices' quality suffers?
4.  What about pizzas kept in a pizza display/warmer?  How is the quality vs slices reheated in the deck oven?

Answers to these questions will help me get started.

Thanks

Sounds like you should connect with forum member Norma, who seems to have this figured out!
