What does this have to do with Pizzaman106's thread? His pizza is the topic.

That's fine.  It looks great.  The topic is 7 minute NY style.  Has it not drifted?  I'm just injecting a reality check.  People have been complaining about Reddit pizza topics lately.  I don't know anything about that.  I'm just voicing my opinions in an attempt to keep this site the best resource for legit pizza info.  I respect you and look forward to discourse.

L'Antica Pizzeria da Michele nyc.  It doesn't make it NY pizza.

Actually, the famous di Fara pizza in their ovens prime was a 5 minute bake. The owner Dom DeMarco,in one of their you tube videos  few years ago, said no pizza should take more than 5 minutes to bake. Of course in the last several years as that ancient gas oven of theirs continued to slow down more and more, recent pizzas have been taking around 7 minutes to bake. And it looks like they had also changed the flours they were using when they had to extend the bake time. Life is good!

This is what's throwing people.  A 5min vs a 7min NY bake, baked to the same degree of GBD is going to be more similar than not,  like 95% similar.

I don't normally jump into the fray on threads that have taken a turn like this one has. I don't know if I can agree with everything you've said, but I certainly don't interpret anything you've said about the pizzas on this thread as being in any way condemning, and I have to say that labelling you as "angry" for anything you've said is just ridiculous as far as I'm concerned.
If we're not questioning the reason for our existence, then what the hell are we doing here?!

sorry, read the earlier posts but haven't read the intervening 25 pages or so, until this photo I assumed you were baking in a home oven but
it looks like the pizza is sitting in a commercial space, are you baking in a commercial pizza oven? and the post with your recipe/workflow indicates a bulk ferment which I thought odd for one dough ball but now I'm thinking that was a poor assumption on my part, how many dough balls are you bulk fermenting at once?

in any case, pizza looks wonderful, apologies if my questions were covered in previous posts.

yes, but it's not just that, walter's pies have a very distinctive/unique look in terms of crust color and stretch that I've always thought of as old nyc/nj. I sorta randomly pulled that photo from one of walter's threads but with a little effort, I could probably get a closer match. I dunno, maybe walter gets a little more air in the cornicione...
