Selling Neapolitan-style pizzas
« on: January 06, 2023, 05:02:31 PM »
I feel that the best way / time to consume a Neapolitan-style pizza is within a few minutes after it bakes.  Once it cools down, it loses it's essence.  Especially if you "deliver" this style of pizza, it'll totally lose it's character (getting soggy in the pizza box, cooling down, losing it's original texture, etc).

If there is anyone here who has experience (or who has knowledge from someone ELSE's experience) with selling Neapolitan-style pizzas "to-go", can you please provide some input/feedback?

When we go for Neapolitan we always dine in. We will bring home leftovers if there are any and warm up the slices in a dry frying pan. I do see people come in for takeout though.

Don't know how effective they are but have you ever seen the pizza boxes Song E Napule uses, they are ventilated and the interior is like a reflective material of some sort, pretty cool, never seen boxes like that before, looked expensive!

Even with those boxes at Song (which is great pizza) I am not a fan of the pizza after 10 minutes in the box.

A box is where pizza goes to die...

"The most important element of pizza is the dough. Pizza is bread after all. Bread with toppings." -Brian Spangler

"Ultimately, pizza is a variety of condiments on top of bread. If I wanted to evolve, I figured out that I had to understand bread and first make the best bread I possibly could. Only then could my pizza evolve as well." Dan Richer

I wanted to make a pizza for my tax lady but didn't wan't to put it into a box to drive it across town because I felt that it would misrepresent my actual pizza (btw where I live across town in a vehicle can never take longer then 5min!) so I had my wife drive me as soon as the pizza came out of the oven as I held the pizza on a cooling rack with a loose fitting makeshift top cover I made to keep the top/cheese nice and hot.

Never tried this https://www.taliadinapoli.com/pages/story but it would be interesting to test it to see what it's like if you are interested in getting into the business of selling Neapolitan pizza.

I could sit down in the restuarant and polish off a Neapolitan in minutes while others at the table would still be working on it an hour later and half a bottle of wine with it. They probably aren't all that critical of the pizza being cool. For the average customer I'm not sure it matters as evidenced by all the bad pizza being consumed on a daily basis.
