What percentage of oil and honey?

Hi, I want to have a go at making a New York style pizza on my Ooni Koda 16. A few questions, if I want to use honey and oil to help with the crispness of the dough what percentage of the flour weight should these be and are they counted as part of the liquid? Also what percent hydration do New York pizzas typically run?

I doubt honey would be necessary.  2% oil, 58% hydration.

Sounds reasonable to me.

I think sugar or diastatic malt powder is more common in New York style than honey, but the Koda should be hot enough that you donít need any.

Hydration is typically just water.
