Pizza saturday from freezer. I cooked this product few weeks ago using WFO and today it needs only little time in Ardore.

 Reheating gives a little bit more colour to edges, but taste was wonderfull.

Cold wind blows ans it's good time to melt a freezer. Found one orphan ball there. Here is the result. Sage & potato.

Pizza-Friday results. At the front is broccoli & garlic and behind Prosciutto Cotto and sage. Headline is history, becauce i chanced from biga to poolish for a while ago.

Very nice looking pizza though I have declared to my grandkids that I have had sufficient broccoli in my life and that I am now exempt!

That pizza was ordered by wife. She is a vegetarian and scale is wide with vegetables. Broccoli is not my favourite, becauce it rolls over pizza like pinballs before ovening.

Fair enough. I like both biga and poolish, but I prefer biga in pizzas for the puffier crust and more open cell structure. The lumps can be avoided by making some changes to the mixing procedure, but as you say, poolish based doughs are definitely easier to mix.

Very Nice! After my hot smoked pizza last night, I totally agree, I likely won’t do hot smoked again. I see that Arne uses sushi grade raw salmon which also looks very nice.

Spring time pizzas. Nice to operate in warm weather, it was +24c first time this season. One white with cold smoked salmon and others are prosciutto di parma. One photo is window pane test and it works well. 50% poolish, fresh yeast, Caputo Nuvola 30%, Oro 30%, first time Finnish tipo00 30% and 10% wholegrain from same mill.
