I saw PH are releasing a  stuffed crust.. without the pizza

I like the idea of Pizza Hut cheesy bites not sure if they sell them in the US.   It's just a  stuffed crust, but they slice the  stuffed crust into segments and twist the cut pieces 90 degrees

I made a clone years ago but wasn't perfect

I'm makin stuffed crust this weekend but using shredded mozarella for the crust like this

I have two options

Make it in a pan like I made that cheesy bites above.  For that I cook at a pretty low temp (180-200c convection oven)   I tried cooking a pizza once at a high temp in the pan and it doesn't  cook the bottom..  probably because it takes time for the pan to heat up.        It's also easier to put the cheese in the crust against something solid.

Or  cook it on prachment/ directly on steel   a bit messier but can cook it faster higher temp.
