I thought I sent this earlier but didn’t see it.

Gentleman’s Gray is the color but reads blue . Easier to see in natural light.

First time I used frozen dough from my Gumbawill hybrid recipe. Guessed on the timing to defrost, warm up and complete fermentation as per my fresh doughs but it worked out great. My dough stretching has improved and I unintentionally  stretched  to 22”and I had to cut the dough to 18” after opening.
 I need to reduce my dough ball size.

Result was delicious. Ultra thin, just the right balance of crispness and foldability. Once my Saputo stones come in to retrofit my WFO, I will go back to experimenting with Neopolitan!

Dusting of aged alarm
20% whole grain content
