Difara's Recipe

Hi !

I am new to the site and only have been making pizza for a short time. I have had great results thanks to James at Sip and Feast. I have researched a lot about difara's pizza Recipe. Love his pizza. I am going to try and recreate it.  I have read some stuff about him on here. Anyone know about his dough? Is it a mix?

I mean a mix of 2 flours.

There's more hard cheese than mozz?  Whoa!

I wondered about that too. If I remember right, he puts fresh mozz on the round too like he does with the square. Maybe they forgot to list it?
