Thanks, and thanks for the recipe link, that'll come in handy today because I had a friend ask for the recipe!

//edit, actually the book recipe has brown sugar but otherwise looks close, will compare in more detail later.

Actually, Martel is listed as one of Charles van Over's testers, so I figured it'd be the correct recipe.

You got me interested enough that I ordered a "like new" copy of the book from Thrift Books. I'll be in business in a week or so, depending  on USPS.

Another batch of the BBE bagels. Meant to do a couple with sesame seeds but forgot.

Those look great, Carl. A really nice brown sheen to them.

I'm looking forward to working some bagels into my baking schedule. Yesterday was sandwich buns and today was corn tortillas. Tomorrow probably wheat tortillas or pita. I'll probably wait to get the BBE book just so I can look thru it before rushing into a new addition.

Todayís batch. Went from 16 per batch with KABF to 22 today with ATBB. And they have holes. A bit sloppy on a couple of bagel board flips :-\

Carl, they look great as usual.

Are you shaping them in the traditional way with a cylinder of dough wrapped around your hand or are you flattening a dough ball and poking a hole in the middle. I've seen it done both ways and I can't see a seam in yours like I often do in others.

Off topic: I finally got my copy of BBE yesterday. I'll be working my way thru it and eventually posting a picture of my results, once I get it down. Won't be posting pictures of any failures!

Yes, cylinder of dough wrapped around my hand. I overlap the edges like the book says and pinch them together as much as I can. I can still spot the seam but it does disappear much better than I thought it would. I thought about doing the hole poke method but this works pretty good.

I traded some emails with Priscilla Martel last week who is Charles van Over's wife (I'm not sure that was clear earlier in the thread) and they are working at getting the book revised and re-published, I wish them luck and will buy the updated one when/if it comes out.

Double batch tonight for Sunday bagel deliveries.

Ones up front are chocolate chip for a birthday present.

Kind of odd shaping with chips in them. Toasted the worst of the bunch. Was pretty skeptical of CC bagel, but oh my   :)

Although I got the "Best Bread Ever" book, inspired by Carl's bagels, I still haven't gotten around to making them.

I guess they say there are bagel people and there are bialy people. I think I'm stuck in the bialy category for now. I started using Jeffrey Hamelman's basic recipe but for the last few years I've been using around 66% hydration rather than 58%. I also use a little less salt and IDY.

I make a dozen in a batch but have to bake six at a time to fit comfortably on my stone.
