Dough Retarder/Dough Cooler Options??

Hey Yall!

Weve had a pizza place for about 9 years. We have always found a used cooler and built a speed rack that fits inside to keep our dough on. We keep them on sheet trays and pull them out of the cooler for use. We have had them built into prep top coolers, and right now we have a stand up true cooler with the shelf built in to keep the trays next to a steel table that we use to stretch. All in all we could put a cooler in there up to 72, but slightly smaller would be better. We also go through a lot of dough so multiple doors would be the best option for us.

Is this the best route or do they make coolers specifically to fit my needs? Ive seen some of those dough retarder prep tops with granite and stainless tops, but I dont know anywhere around here that can see them. I also dont know anyone around here that has one that I can ask their opinion on.
