Hello, friends.
 A new topic for our entertainment! This one has rules! Well, one rule. Today's sandwich has to be on today's bread (homemade bread)

My rolls would be better suited for foot longs, but this works.

Isn't the point of this thread , the sandwich needs to be made with fresh baked "todays" bread? Am i misunderstood, or are others who posted sandwiches misunderstood? I mean, i have held back because i didnt want to use "par baked" my wife makes every day at her bakery.

The main theme is that the bread is homemade. That is 9 times out of ten going to translate to very fresh. If we make a big batch and freeze some while fresh. I think that is acceptable. The rules can be stretched here, nothing set in stone. Store brought bread is out. That leaves us a lot of room to maneuver. If your wife makes bread and you have an epic sandwich to share, please do!

Nice! I/we would love to see your sandwich creations on your wifes bread! Additionally, I would love love to see your wife's bakery setup. That's the dream for me to open a tiny bakery and bake all day! Try a get to a point of success, where I could bring my son and stepson in. From that point, I could be like old man Di Fara! One of my motos would be(I have a million) You don't have to go home but you can't eat it here! Smile...

Its not a tiny bakery, she runs a bakery at a local family owned grocery store. They make almost 75% of the bakery and deli (smoked meats) in house. The rest of the store is mostly higher end grocery products. Sorry if you misunderstood. My point was a lot of the dough is made ahead of time then put into the walk in freezer to be proofed daily and as needed to meet demand. I wasn't sure if that qualified for the topic of this thread.

Today we have, (don't worry the tiger rolls are almost gone) the modified cheeseburger Muffalata sandwich. Like me, this sandwich is an enigma! Pasture-raised, grass-fed, organic Bison topped with highly processed Kraft American cheese. For the topping, we have ketchup, mustard, and a mix of marinated green olives, marinated roasted red pepper, and marinated artichoke hearts.

Roger that. I will have to have her modify some of the "protocol" breads. I always wanted to use the Ukraine bread for longated sandwich instead of the round loaf. I have some good ideas for a pastrami rueben Hero on Ukraine bread. :chef:
If you never heard of, nor had Ukraine bread, its flavor is 10x better then Rye.

This is an old bake. I was making two loaves of this 100% whole wheat/spelt sandwich bread a week. One for me and one for my buddy Noel, his son needed to start eating more whole grain/foods, less junk. Difficult to bring this hydration dough together but worth it!

The main thing to remember here is to take your time incorporating the ingredients. Rest the dough for a couple of minutes between inclusions. Make sure you build up a good amount of gluten before adding 10% of water/honey/oil. Good luck. The preferment is my sourdough starter. If you make a preferment with a tiny bit of yeast then add yeast to the final dough that could work too. Use your judgement as to how much to add.

Thank you, that is very helpful. I am definitely out of practice. I don't use my mixer all that often, but I may need to start again to get full development in my bread doughs.  Sometimes I don't develop enough gluten, and too often I underferment. No bueno! I may have a touch of impatience going on there, and when I try to take time to get it right I end up blowing out the dough. 
My SD is robust at the moment, so I will try again tomorrow. I was going to post my sad loaf in the bread thread, but I threw it away and didn't feel like digging it out of the trash just to embarrass myself any further! It was FUGLY.

Yeah Taylor is a local staple in my area. Pork roll breakfast sandwich is in every local Diner menu. The best is the roll that comes in the original cheese cloth. Scrapple is another local staple. Now im hungry for extremly fried scrapple with fried onions and gravy with a side of home fries or french fries. :drool:

Just in case you didn't realize it, I concocted this formula with a lot of help from the pizza calculator. You can make a lot more than just pizza with this calculator. I have tried others this one is still my favorite.

I use several calculators myself (usually foodgeek's).
This is one I don't have, so thanks I will definitely check it out.
My simple fugly loaf was 80% hydration whole wheat, 2 hr. autolyse, then 25% SD and 2.5% salt added in. It came together well and strengthened nicely with s&f,  looked like it would be a success, but I need to get a better grasp of what well fermented whole grain looks and acts like. My previous attempt to this one was over fermented and collapsed. I thought it was because of the bran, so I sifted it out and fed it to my SD to hydrate it fully.
Will keep working on it!
I have made many other high hydration doughs with beautiful results (some with milk, oil and sweeteners, but never with all whole wheat flour). This is a new one for me and I am making all the mistakes as if I had never baked a loaf of bread before. 
Practice makes perfect ( I wish) and I try to take it in stride.  I would really like to add a new sandwich here, so I better up my game. haha.

I was trying to decide on what topping/condiments to add. However, I was at work, had a hectic morning, and just went with my stand-by plain with mustard. I do love calf's liver with sauteed onions. Next liverwurst sandwich get's onion. Red, raw ones I think?

Speaking of stinky cheese, anyone know where to get a alternative Tiger cheese. I was sad to find out its no longer produced. It was my go to cheese N Mustard. :'(

And don't say Gruyere. Its too hard. This was a soft creamy cheese, Similar to processed cheddar or american.

I ordered liver and onions on our (now wife and me) first date. She has told me many times that we nearly never saw each other again.  :-D  Outside of that little faux pas in 1979, things have worked out for the best. We have been happily married since 1983.

Could probably make a reasonable if not better clone by going with a good looking homemade processed cheese recipe and use a good gruyere as the lead cheese! Costco carries one of my favorites!

Good point. I could go the modernist cusine route and make my own processed Gruyere just like Tiger. Thanks Jon. :chef:

Any idea's of adding another "stinky cheese" to the mix while im at it?

Now we are at the nitty-gritty for freezer batch bread.
1-Bagettue, and 2 tiger rolls.
Today's masterpiece is lamb patties on tiger rolls with tater tots.

 On a related topic. I made a batch of pizza dough yesterday morning. One ball when straight into the refrigerator for a pizza Wednesday this week!

This is how we do it in "Fun City"! These easy little rolls are some of the best-tasting bread I have made! All that I need to do is get the size right.  These are dinner roll sizes. I am aiming for the huge Bodaga size (125g) Oh by the way the taste/texture of these is no comparison to the industrially baked bodega bread!

Today's bread. My work in progress Kaiser rolls. The size is getting closer to what I am shooting for. Things that will help.

1. more resting of the dough between shaping steps.
2. Gently spread the dough to a 5" circle. This will achieve a lower more spread-out profile.

Kraft singles and butter. Classic!

Chicken, avocado, sharp cheddar, mayo, S&P on sourdough from the freezer.
This loaf was hilarious. It started in a loaf pan, and after what I thought was 15 minutes I wanted to bake it on the stone for the remaining time. Turned out to be only 5 minutes into the bake, so it spilled out of the pan onto one side, then it cracked open (which was a good thing to release more steam since my slash had already begun to seal itself) and I had a loaf that was square on both ends and a full boule in the center.  Another fortuitous mistake based on my preoccupation with baking and getting baked at the same time, which turned out okay anyway. I had a picture of the loaf, but must have deleted it.

Turned out to be only 5 minutes into the bake, so it spilled out of the pan onto one side, then it cracked open (which was a good thing to release more steam since my slash had already begun to seal itself) and I had a loaf that was square on both ends and a full boule in the center.  Another fortuitous mistake based on my preoccupation with baking and getting baked at the same time, which turned out okay anyway. I had a picture of the loaf, but must have deleted it.

This one came out of a banneton, scored and baked on my tiles. It expanded so much that it lifted the deep hotel pan I had covered it with instead of a cast iron set-up. It was delicious but we all got a big laugh out of it. And, yes, sandwiches were had.

Could probably make a reasonable if not better clone by going with a good looking homemade processed cheese recipe and use a good gruyere as the lead cheese! Costco carries one of my favorites!

Texture, spot on. Flavor, on the mild side of "slightly stinky" more sharp. I guess i need to use a more aged Gruyere, and leave out the sharp cheddar.
Still a delicious creamy cheese, just not what im aiming for.
100g Gruyere
100g sharp cheddar
1/4 cup whole milk
7g sodium citrate

This was supposed to be paired with steamed rice, but this happened. Tender roasted beef rib fingers, umami jam (tomato half roasted in beef rib fat), mayo and a couple jalapenner slices to make it better🤓

We bought a lot of bread from Jimmy John’s last night. Price has gone up from $2 a month ago to $5. We only needed 7  :-D  They work just right for our meatball sandwiches. My wife and I made meatballs for the immediate family’s gathering after a funeral home visitation; meatball sandwiches are what they requested.


Today’s lunch on the only piece of bread left: oil and balsamic vinegar (wanted red wine vinegar and a healthier dose but we are out), provolone, ham, capicola, more oil and vinegar. Forgot oregano and didn’t notice we had part of a nice tomato until I put things away.

Yeal, lol, honestly it’s not that much more for a sandwich. I rarely eat there or from there but we discovered about 18 months ago that their bread suited our needs for meatball sandwiches. The increase from $2 to $5 seems arbitrary, done with a ‘whatever traffic will bear’ attitude. We were stuck last night and needed them to meet a deadline. Next time probably not. We get about 3 sandwiches out a a roll, fwiw.

If you buy a component of a product at a low price it deprives them from making a full profit on the whole product. They don't want to sell rolls but they haven't figured out how to say no.

Find an Asian shop that sells banh mi sandwiches or bakery that makes buns for them, most will sell those wonderful little baguettes by half or full dozen........AWESOME!!!!

A pizza hut "large" is 14".  Around here a small is 16", a large is 18" and a slice is 20".  This was very good.  PH is inedible.

Call it kid nostalgia, but i still like Pizza Hut Pan. But i won't pay even $15 for one pizza, let alone $18 they are currently charging, and coupons seem non existent.

I was taught early in the game to price your extras to match the deconstructed menu item price. If you don't, certain types order a bun, extra patty, cheese, pickle and lettuce and eat the same burger as another guest for a lower price.

I've always liked PB and onion, kids like PB and pickles, PB and pickled jalapeños also very good, wife always liked PB and mayo, only natural to go a cambo! BTW, ANY PB sammich a must with a bowl of chili or Asian stir fries like chow mein and the like!!! 😊

I am a fan of PB sammy dipped in chicken soup or ramen, so imagine it's good with these others. Also PB and cheddar cheese, PB and pickle. Never had imagined mayo and onion but will try!
