Just finished the bread and butter pudding the missus made last night.
I guess everyone knows what that is, but just in case someone has never heard of it, I'll try to describe it.

You get a loaf of stale white bread, generously butter a heap of slices and push 'em butter side down into a tray of raw sugar.
Cut the well buttered and sugared slices into triangles and arrange them in a greased baking dish.
Scatter a generous handful of sultanas in the little crests and valleys.

Crack 8 eggs into a jug. Add milk. About 1.5 times the volume of the eggs.
Whisk until its all combined into a fairly runny yellow custard.
Pour over the bread slices. Sprinkle on a generous top layer of more raw sugar.
Set aside for a while to let the liquid saturate the bread slices.
Bake at 180C for about 30- 45 minutes until the top is golden brown and the custard is cooked.

Serve hot with a generous pour of thickened cream or a dollop of ice cream.

Health wise, this dessert has no redeeming features. Loaded with eggs, butter, sugar, white bread, cream.
Everything the fun police tell you is evil. But its delicious. Just take an extra BP and cholesterol tablet before bed.

No cooked photograph, got engrossed in scoffing it.

Taking it one step beyond with Bearnaise is never a bad thing.

Hey, I do that! Basically let the steam cook the topside of the egg. Works great.

I'm going to meet up tomorrow arvo with an engineer I used to work with.
He's got a couple of mates enthused and they are doing a lap of the Flinders Ranges on their touring bikes this weekend. They are all Seth Efrikens, so I've done a batch of biltong.

But I want to take something else that will work with beer.
Years ago I tried my hand at smoked eggs , but I wasn't that impressed.

But I've been watching you-tube videos and reading up.
Did a few experiments earlier in the week.
Reckon I've got a workable plan, so today I'm going to smoke a dozen eggs the way that seemed to work best.

Wish I was as clever as these people. They've developed a way to smoke eggs at about 4C, they stay completely raw, the shelf life is radically extended, and the egg can be cooked anyway an ordinary egg is cooked.

Yeah another thing I tried back in the day that I wasn't impressed with. I'll revisit it soon.
I had no internet access at the time, so I was feeling my way in the dark. Should be able to do a much better job now.
The flock has been reduced by 20%. Hawk got one, and maybe the second one. 8 birds left, eggs coming at about 6 a day still.

I assume you mean this sort of stuff?
This is a South Aussie product that has been produced in state since 1925.
It's minced raw horse radish "creamed" with mayonnaise, and is wholly delicious. I love it with hot corned beef and on corned beef sandwiches.
 
A setback. The Saffers have all come down with a 'flu of some sort.
Tommie forwarded me a copy of his negative COVID-19 test result, so at least it isn't that, but still they've postponed the big trip for 2 weeks.
Bugger.
He's assured me that I can freeze the biltong for a couple of weeks, so they don't miss out. What an optimist.  :-D

Ah well, they can stay out west 'til they get better.
Not that I'm too concerned, I'm fully vaccinated and the whole state has only had 916 cases total, 904 of whom are listed as recovered.
4 died, and 8 are listed as active, with none of those in ICU.
So we are doing OK, I guess, except for the poor buggers who didn't make it.
Anyway, I now have a further 2 weeks to refine the smoked egg process.

Yes indeed. We had this ad campaign to attract more tourists from the US.
At one point Hoges says "I'll slip an extra shrimp on the baby for ya."


It caused a great deal of bemusement here. "WTF is he calling that big prawn a shrimp?"

There was a whole series. Classics.


But yeah, no one in Oz would put a shrimp on the barby.
Most wouldn't even do it to a prawn.

Its a bit like Foster's. We've all heard of it, we know its famous overseas, but none of us actually drink it.

And I haven't had a Budweiser since the '80s nor a McDonald's burger since the '90s.  I have never ordered delivery chain pizza.  I'm special.
