Detroit Style Pepperoni - cupping alternatives

When it comes down to the pepperoni choice, I like the cup and char, but I actually prefer the thinner style roni's. They may cup, but rarely char. I use the Hormel brand currently. I think  the thick cupping roni's make for good pictures but are inferior for the taste and texture of a slice. What do you guys think? What do your customers think? I'm just going by my taste, but I can't tell if I'm correct in my path with bucking this particular trend. What do you all think? Video of one of my roni slices here...
