Do you bake the crust before putting the topping on?
« on: August 09, 2022, 12:59:12 PM »
I've usually just put the dough cheese and toppings in the pan and let it all cook together.  But I've found that the crust was just a little bit too mushy.

Recently, I've tried precooking crusts in a 500 degree oven, at various times.  I was happiest with the crusts I precook for about 2-4 minutes.  Parts of it should be somewhat cooked, but other parts of it should still be doughy.  This is enough bake to give it a little bit of a crisp and chew, while also being soft and fluffy on the inside.

I've made detroit style exactly once but i think the issue is your pan.

I'm gonna guess it's aluminum, and maybe not with a dark coating.

Move it to the lowest rack.
There are many kinds of pizza, and *Most of them can be really good.

I usually do, I think they turn out better that way, but I’ve been told my crust is a little thicker than “standard” Detroit style.   For what it’s worth, Tony Gemignani recommends a 6 min pre-bake in his book.

(And note I’m using a seasoned steel pan.)
