So yesterday I had an urge to make pizza. After one of my friend posted his results, decided to give Detroit style a go. Followed the seriouseats recipe(using mixer)73% hydration. Upscale the recipe a bit and used 2 9x9 pans.
My thoughts:
- Man higher hydration doughs are messy! This was further complicated by the fact I split the dough in 2.
- Must learn more patience when stretching the dough. Too many holes developed and was afraid I scrapped the whole thing
End result was great! The crispy/chewy combo is so good, and made great leftovers for breakfast today.
