Unfortunately, the air traffic controllers strike in France has created many delays, and large packages do not enter on all flights.

I bought the green 70x70 pizza oven and had it shipped here to the United States.  The price was fantastic, the oven was in perfect shape and easy to setup.  I am about to throw the first pizza in it now...Pizza napolitana, of course.  When there was a shipping problem due to strikes in Europe, Francesco talked to Fedex and got my oven delivered promptly!  I will post pictures of my pizza later.

I had the same shipping issue with my oven, we must have ordered them at the same time.  You are right, when Franesco called FedEx it arrived two days later.  I did not have any dough made because I didn't expect it to arrive until after the weekend.  But there will be pizza served everyday this weekend!

I received my Pizza Party oven yesterday. Two days earlier than predicted and six days after placing my order. I'm in Southern California, USA.  I ordered something the same day from Oakland California and am still waiting  ::).
The costumer service, packaging and shipping were top notch. It took me maybe a 1/2 hr to assemble everything and have it sitting on the stand.
Looking over the oven, you can tell it's handmade, it looks very nice. If I had to give a piece of advice it would be to see if the edges of the outter skin could be folded for a smooth finish, they are sharp. And maybe a way of hiding the black sealant on the face of the oven.  Other than that it seems like they are in the right direction of providing a quality product to the average pizza enthusiast.
Thank You very much for a great 1st impression. While your company continues to grow I hope that you retain your great customer service.

I see only one pizza at a time being made by everyone in the 70 x 70. Does the 52 x 50 have the same 14 inch size opening? I prefer a round pie and see no reason to buy the larger oven if I can fit the same size round pie in the smaller oven.

Blue fringes, you can bake 2 small pies in the oven at the same time. Skill in turning the cooking pies is required. I have been pushing my fire to the side for baking but am considering pushing it to the back, opening a wider floor in front with potentially easier access to 2 pies cooking at the same time.

hi Bluefringes sorry for delay, in the Pizza Party 70x70 is possible cook 2 roud pizzas at the same time, instead wood fired pizza oven 52x50 is possible cook 1 pizza
more customers cook only 1 pizza each time because it's easier, at 350-400 'C (650-800 'F) the pizza cook in about 1minute - 1m20s is most quick
the more experienced cook 2 pizzas at a time
alternatively very comfortable and easy is use the pizza peel for "pizza al metro" to realize long pizza

Since then I had moved & no longer had a WFO, so my focus was NY style in a home oven. After seeing some members posts of their successful Neapolitan pizzas using the Pizza Party, and the recent notification of the 2015 model being available at a great price, and the fact that I will be moving again next year, I figured a Pizza Party oven is a good fit for my life right now. JD's going NP, and I couldn't be more excited. Wish me luck!

Anybody here using one of these indoors?  I happen to have a wood burning stove in my kitchen, which means I have a chimney and and a big black exhaust duct that leads to my chimney. That duct gets hot enough to fry an egg on and radiates an enormous amount of heat into the kitchen.

I was thinking, how hard could it be to sit the pizza party on top of the stove and run an exhaust to the existing exhaust or having the charming wood burning stove removed in its entirety and putting the pizza party on the existing slab, and connect it to my chimney?

For me, it really raises three questions: 
1) Could one make a "quick connect/disconnect" system so that the pizza party can be easily moved out of the house in the summer (I have a feeling, once installed, I'd be using it indoors even when it hot outside only because I am not a huge fan of cooking outdoors when all of my supplies are inside);
2) How messy would it be to have this stove indoors? Do you just sweep the ash into a dust pan, or would you use a fireplace vacuum?
3) Who would one pay to connect such a stove to my chimney?  Just a general contractor?  I wouldn't do it myself.

David, The oven is very clean. I have never had ash come out unless I took it out. I sweep after scooping the bulk. A vacuum would work after all is cool.

My oven arrived today, which took a mere 4 business days to ship from Italy to Mississippi. Unreal! I can't wait to get to work. I'm quite impressed with the oven already and I have not even tried it yet.

Well I wasn't going to post the first pizza I made, but I was so thrilled with my first true NP attempt that I felt I had to. The oven is so easy to use and very efficient. Best of all, there is so much potential considering I used AP flour & IDY. I'll be sourcing Caputo and getting my Ischia starter going for my next bake.

JD, how many pieces of wood did you burn to make the pizza and do you wind up splitting a "normal " fireplace log sized piece to burn in the oven? (A pic of the fire you use would be great assuming you can take one. And a brief explanation of the process. That is, do you start in the middle, move to the side, add wood, etc.  I've seen videos but curious what you did.

I wasn't really keeping track, but if I had to guess it was between 4-6 "normal" log quarters in about an hour and a half.

I started the fire in the middle but towards the back. I did split the quarters into smaller pieces so it would burn hot & fast, and technically the floor was up to 800+ in like 20 minutes, but I went a full hour to saturate the hearth with heat. After about 30 minutes I moved the fire to the left and kept feeding it relatively small pieces. By an hour the hearth was 950+ opposite of the fire, so I stopped feeding and let it even out for 20 minutes. The floor got to 850 and I threw a handful of very small pieces (think kindling). I made the pizza while the kindling took off and by the time I was ready to launch the entire ceiling had rolling flames. I had to turn the pizza almost constantly because it was very hot in there. That's about it.

Remember, this is the first time I ever fired it so take everything I say with a grain of salt.

Fire in itself has entertainment value. I wasn't just looking for an oven, but the full Neapolitan experience.  Think gas vs charcoal when doing BBQ.

Thanks JD. The first time experience is important is good to know. I will be curious about the results from shorter burn/less fuel when and if you try that route. I probably should not be thinking WFO given the work involved, but I am drawn to it and the idea of having it in my kitchen would make it a lot more convenient than going outside to a black stone. Still, buying, splitting and storing wood and then having to light a ms manage a fire is a tall order given the available time and would seem to limit use to the weekend. Good enough for me if it didn't take too much time. Right now I turn the gas on and as it preheats I do other stuff until time to shape and top the pizza. When done the oven is ready and I cook.

But ... FIRE, that just seems like a lot of fun.

I mentioned it before but fire has that "wow" factor. I wouldn't be so quick to assume making and maintaining a fire being that difficult, it's not when you do it a little while (I've always had a fireplace in my life). I'm definitely going to try the 20 minute heat-up in the next couple weeks.

Is the blackening at the tip of the door inevitable for a WFO? My concern when seeing this is that it indicates a lot of smoke exiting the oven rather than running out the chimney. Not terribly important, perhaps, if firing outdoors. But indoors is another matter.

In my experience using this oven, the blackening occurs when leaving the door off. Of course it is important to maintain a good chimney draft.

The company sells a damper that goes in the oven chimney before the connection to the home chimney. As far as smoke when using the damper, I believe you would leave the damper fully open if you have flame in the PP and only close it once the flame is gone, to maintain heat inside the oven. I have never used the PP to bake anything but pizza , however.

In all seriousness though, I'm really happy with my purchase. I love that it's portable and I love that it's wood fired. Not only do I prefer a wood fire, but I chop my own firewood so it's free fuel :)  The oven will pay for itself over time as compared to the BS.

JD and DonLuigi are setting the bar for pizza out of the Pizza Party Ovens. While good, mine do not compare to what they are doing. Simone is a great guy and will make sure that you are satisfied.

I use super dry German Beech from my region that I get from a local company that is producing all sort of wooden things. The wood is so dry you could set it aflame with lighter only I guess. I use fore-arm sized chunks for the fire. If i need to get more flame quickly l use smaller pieces. For me it works perfect. Beech is a great wood. It burns hot, fast and long at the same.

Just ordered 2 Pizzone ovens from Simone. I'm getting one and my co-working is getting one. Can't wait to fire it up and getting cooking. I've been using a Vision Kamado grill for the last few years. In fact, I bought 2 of them because it works so good. Found the  pizza party oven on this fourm. After reading all the great reviews and seeing the great price, it was worth a go.

If your garden soil is acidic, use it to raise the pH. If you like corn tortillas, at least once in your life you should make them from scratch using wood ash to nixtamilize dried field corn.

After several years playing with the Verasano recipe and lots of variations and the Villa Little Black Egg, it was time to make the jump to wood fired.  I just got my tracking number today for a 70x70 with glass window door.  I hope I can get the same results everyone else seems to be getting and that illusive 90 second tender yet crispy that propane just can't quite reach.  My wife forced me to do it (how cool is that?)!

The oven shipped on May 9th and got here today (13th).  Its heating up now to cure the oven.  With a small piece of wood (3"x3"x14"), it easily got up to 200C.   

One question.  The oven came with 8 bricks.  Are 2 of these spares?

I'm looking forward to doing some damage this weekend to my diet.

I saw the "unpacking" of this oven on a YouTube video. Those are extra bricks in case you ever break or lose any. A gift from the makers of Pizza Party, to be sure. :)

I have been looking for a mobile oven myself to take to my out-of-town classes and events. This one just may fit the bill. My WFO in my yard. at several tons, ain't goin' anywhere. ;)

Even with the bricks in place, this is only a 2 man lift (150lb or so).  I didn't like the looks of the available rack so I built my own out of 80/20 t-slot aluminum.  I used 1.5" (15 series).  My rack probably cost as much as the pizza party one, but it is very sturdy and since its T-slot, it can be modified.  If you want portable, it might be perfect for you since you can take it apart in a few minutes with a hex wrench and modify its configuration to fit your needs on the fly.

My wife made some bread last night and it turn out pretty good.  I made the mistake of adding wood after she put the bread in and the fire climbed across the ceiling of the oven and scortched the top.  I should have just closed the door and let the residual heat do the work instead of stoking the fire.

All I could go by was the pictures.  It looked like relatively thin gauge aluminum.  Being in Indiana, we get some really strong winds in the spring and fall so I needed to make sure the stand would not topple.  80/20 extrusion is extremely strong.  With the 1.5" profile I used, I could probably support a F-150 truck.  Since it will also have a bunch of wood underneath, that should prevent any top heavy toppling even if a good wind catches it.

I'm sure the standard frame is good enough for most applications.  It might have been good enough for mine, but considering the cost, I didn't want to risk it.  80/20 has an ebay store and the since they are also in Indiana, shipping is relatively cheap for me.

The weight of the extrusion is about 1 lb/foot.  each of the pieces I used is about 3 feet.  I used 10 of those, so about 30 lbs + the weight of the brackets and wheels.  I am not a boat builder.

I understand now.  That was a piece of wood from another project.  I will do something more durable soon.

I made chicken in the oven tonight.  Nice flavor, but a little dry.  I might have overcooked it a little bit.

I just received my Pizzone oven a few weeks ago but did not get a chance to fire it up until this past weekend. I place my oven in my back patio which is covered by plywood since I live in the NW and it rains a lot here!!!  My concern was the smoke heating up the plywood and causing problems. Luckily I also ordered the antipipistrello no smoke system which works great at diluting and pushing the smoke away and keeping the plywood up top cool (the flu is rather close to the plywood...).  My intention is to eventually have a contractor build a chimney that goes above the plywood in a manner that meets code.  The bid for that is about $1800 which is more than the oven itself, although I think ultimately that is the best option.

My first bake was great and I am very excited with the potential of this oven. I did take some afterthought pictures of the pizzas coming out of this thing, but I can't figure out how to post a picture using my iPad. Would definitely reccomend this oven to anybody looking for a WFO that works great without breaking the bank and that is portable.

Those chimneys are extra tall.  Is the benefit of a taller chimney that less smoke will come out the front of the oven?  Any downside to the taller chimney?

taller chimney put away the smoke better, and less smoke will come out the front of the oven.
outdoor use: flue very long make sure to the wind, alternatively you assembly long chimney when you use the wood oven
indoor use: not problem, is sufficent install the valve to cook roast or bread, no smoke will come out the front of the wood fired oven

This year my husband and I turned 40.  This oven was our 40th birthday present to each other.  I worked at Chez Panisse in the cafe, so I've been itching to get an oven, but my husband didn't want to build one and a fully built large scale oven made here was prohibitively expensive.  He did some research and we decided on a Pizzone. 
I got my Pizzone from this offer last week and we've already had two pizza parties!  The oven uses a lot less fuel to heat than I anticipated!  I had a 1/4 cord of almond and walnut delivered and I feel like I'm hardly using any of it at all!  I haven't yet cooked more than one pizza at a time, but it's probably because I've been using a cast-iron pan to cook squid at the same time.  It gets a little crowded. 
It is hot right now in Northern California, so I decided instead of baking with my regular indoor oven, I would cook with the pizzone for dinner last night.  A small fire and a few cast-iron pans later and I had a roast chicken and some cornbread.  FABULOUS!

Thanks!  I will try my best to write down how I make pizza, but please keep in mind that I'm a cook, not a writer.  The instructions are brief (but accurate as to how I make my dough) as I am assuming everyone here knows how to make dough.  The recipe is as follows:

2 t dry yeast
1/2 c lukewarm water
1/4 c AP flour
1/4 c rye flour
3/4 c AP flour
1 t salt
3/4 to 1 c cold water (I tend to use 1 c because i like a wetter dough)
1/4 c olive oil

Whisk the first 4 ingredients together in the bowl of your mixer.  Let it rest and when it starts bubbling, add the last 4 ingredients.  Mix well with a dough hook and let proof until doubled.  Punch down and put in fridge covered in plastic or in a cambro until a few hours before you are ready to use.  The dough can be made the night before. 
The next step is boule-ing the dough.  For a 10" thin pizza with a decent rim, I use a 6 oz portion of dough.  I boule them up and then put it on a floured tray, with 2-3" between the balls.  Usually I roll the balls in flour to prevent sticking if they proof together.  A half sheet pan should hold 6 balls. 
I usually boule the dough a few hours before I am ready to cook and stick them in the fridge because it gives the dough a chance to relax a little.  Depending on ambient temperature, I'll pull it out and let the dough proof for 1.5 - 2 hours but my times are a bit wonky since I am just guessing.  You have to look at the dough.  If you press it and it won't easily take a fingerprint, it's not ready...  If it has puffed up and then fallen, it is overproofed, but that's easier to work with than underproofed. 
This recipe makes about 5.5 6oz balls.  A 6 oz ball will make a 10-11" pizza.  A 5 qt mixer will take a double batch of this recipe.  That's what I usually make since my friends are big eaters. 
I build my fire in the left back corner and usually fire my pizzas at about 750-800 degrees.  That is the air temp.  The floor temp might be a little lower.  I don't use the thermometer on the outside of the oven because it is not representative of the entire oven.  You'll have to find the sweet spot on your floor depending on where you put your fire.  I don't know how long the pizzas take to bake but it is less than 3 minutes.  You can't really turn your back on it. 
I don't use the door on my oven except to put it to bed with some kind of covered cazuela with a meat braise.  Yes, it works.  I did a pork shoulder last night overnight.  Pulled it out this morning.  Perfect!  I'll bet lamb tagine or something would work too...  will try that next time.

The version I posted is the version printed in the book The Art of Simple Food listed under Herb Bread or Pizza Dough.  It is basically a scaled down home version of the recipe I used at work.  I have the original working recipe but it is basically 32x's the recipe I posted.   ;D  There are a few small tweaks with the ASF version, mainly a little more rye flour.  I like the rye.  It is a little nuttier and gives a depth of flavor not normally found in a just-overnight-yeasted dough.  Some of the other pizza places in the area use mothers and two day ferments.  That's a nice idea if you have staff or a lot of time on your hands or extraordinary wherewithal.  I have none of those things.  Sometimes it is a wonder I get my children fed, nevermind a dough mother.  (Don' fuhget ta feed ya mutha...)

Given the author/chef/ retauranteur  (Alice Waters is considered a "founder" of California Style), her dough and her toppings, it is "California Style" (Light, airy and tender crust usually topped with "exotic" and uncommon toppings)   She is a pioneer of "California Cuisine" in general.  Of course, here at pizzamaking.com, we all see lots of uncommon toppings and the fancy restaurant pizza world has evolved to embrace that in a lot of ways.

Examples of her 1984 cookbook (in the context of the year, these toppings were probably at the extreme of "exotic and uncommon"):
Caramelized Onions, Gorgonzola & Rosemary; Onion Confit, Walnut & Anchovies; Tomato, Herbs & Quail Eggs; Crawfish Tails & Yellow Tomatoes.

It was open just an inch.  I was just experimenting...  I think I coulda pulled the meat early and I've heard of baking a cake overnight as well.  I'll post if I actually experiment and do that.

Hi,

I just purchased a PIZZONE oven from Italy!! Simone gave me a great offer for being a part of this pizza making forum. I think it should arrive this week. I am a little nervous because I have never used one of these ovens but excited to experiment and learn how to make an authentic Napoleon Pizza and a NY style pizza.

Any advice you can offer will be greatly appreciated. I hope one day I will have the best pizza around for Miles.

I'm looking for an oven that can cook multiple 16" pizzas.  I've looked through this thread, but every place I see that specifies what the large oven can cook, they always say that it can handle 3-4 round pizzas, with the emphasis on round.  That doesn't really tell me anything.  My toaster oven can handle 3-4 round pizzas if I make them small enough.  Can it handle 16" pizzas, and if so, how many?  Is the door wide enough to allow a 16" peel to pass?

No way. The oven opening is 14" at its widest.

It is technically possible to cook 4 12" pizzas at one time with the flame in the back.

A couple times during the summer at our campground, we have a big pizza night and pump out about 80 pizzas in 3 hours.  We have two small electrics and a two-deck propane oven, but even with all six decks working, we struggle to keep up.  One problem is that the electricity out there is sub-par, and the electric ovens can't keep up.  Our propane oven just seems to be designed badly and we're always falling behind.  We'd like to augment our process with another oven.  Since we're all campers and have spent our lives sitting around campfires, a wood burning oven would sit well with us.  But we really need 16" pizzas (or at least 15", anyways).

Well, much depends on how fast we can pump out the pizzas.  If we could do two pizzas every three minutes, that would probably work fine.  As it is right now, we have three ovens, each with two decks, and although we start out at 650F, after a few pizzas, the ovens can't maintain the heat, and we find ourselves standing around waiting to get back up to temperature.

Simone,  Thanks for taking the time to do that, and it's possible it might do what we need, but I think we're probably going to go with a couple of Blackstone ovens for a few reasons.  They can handle the pizza size we need as built, plus they're a little more mobile, I think.  I'll probably have to move the oven on my own a few times each summer, and I suspect that the Pizza Party might be tricky for one person.  The price also enters into the equation as well.  The Pizza Party is certainly a lot more oven, justifying the expense, but it's kind of a big expense for us.

However, I do see a time when I'll want one for my back yard, and yours is what I'd choose.  Thanks again!

I'm not sure I'd call the BS particularly mobile. They are so flimsy, I'm not sure I'd want to travel very far with it standing up, and you can't lie it down unless you take it apart.

Also, I don't think you'll ever get a 16" pie in a Blackstone, probably not even a 15" seeing as the stone is a 15" round. That doesn't leave you much wiggle room in case of a mishap on the launch.

 :-D Arrived  :-D All in place and working. Order complete and everything intact. Great service. Fist pre heating started, just some trouble alligning the stones with some unevenness and large gaps in the middle. I did use the trick to lower the back two stones as a bridge closing which worked perfect. Today i will try with some tools to place the floor better. (cant place pictures to show.)

I got mine!  Not sure the best way to cure the bricks but saw someone used charcoal for their WFO & thought I'd try it.  I put it in a pan so it'd be easier to clean up.  Hot spot under the pan is about 580 degrees, outer edges of the bricks more like 212 degrees.  Put a cast iron grill in so we could have burgers for lunch and get double duty out of the coals.  (Sorry no pics of the burgers.  They were tasty, though!) Actually, can't find the button to post ANY pics  ???

Just ordered my red 70x70 with stand, wide mouth, glass door, and saputo tiles this week.  Hoping that it arrives prior to next weekend so that I can take some time to set it up and season the bricks.  I've been making Chicago style thin pizzas in the oven for years and on my big green egg off and on.  The egg is definitely fun to use but just not setup to produce the best pizza due to the temperature imbalances.  I love entertaining and am looking forward to mastering the Pizza Party and sharing it with family and friends often.  I'll post back once I have some experience under my belt.

Got my pizza oven however typical British weather meant it was not possible to start the build until today.

My question regarding the bricks, is there a specific way to put them in? Seem a little uneven (not level) and gaps between them? Should there be gaps and do they settle? It seems there is more insulation in the middle of the oven compared to the sides.
I would attach a picture but when I press the 'Attachments and other options' drop down there are only 'return to this topic' and 'dont use smileys' as options? How can I attach some pictures?

Also does the chimney just slot on? No screws or anything?
Want to make sure everything is correct before i fire her up.

If the Saputo tiles are ordered as an extra does it also come with the normal tiles for non Napolitana style pizza? Is the window option available on the Pizzone? Are codes still available?

Lastly is baking/roasting more finicky with the Pizza Party compared to brick WFO because it has no thermal mass?

Even though you have to pay extra for the 4 Saputo bricks, they will not ship the original 6 bricks. Or at least, that's what Simon told me when I purchased mine, which did not make sense.

Are the gas models "dual purpose" as in can you still use them with wood if desired? It would make the purchase pretty versatile so you could use wood when time and/or conditions permit and then use gas at other times. Just curious. :-)

I know the last post in this forum is over a  year old.  I have been researching on building my own outdoor pizza oven but then i came across your post.   Do you still have any specials going on for forum members?   Just ordering a pizza oven at this point seems like a better idea then trying to build one.
