Thanks Bill. No, it is a small diameter Hormel that I wanted to try. Not quite as good as Rosa Grande.

I started making a ricotta bake little bit of garlic butter a tad of mozzarella  grated cheese salt and pepper  and basil  .. seems to hold up better in the refrigerator when we need it for calzones Etc in this case it was for a slice white pizza broccoli and red peppers I did roast a pepper quickly on the gas stove good flavor the ricotta sometimes goes bad :-[

Once again, my planned Neapolitan Ardore  bake would up as as steel bake in oven at 550F. About 5 minutes.

The planned Sunday bake was cancelled because we were invited to neighbors' for burgers. I store ardore in basement (for now) and it requires a little more effort than a Thursday night can afford to get it all set up.

 Did 16 pies in the Ardore tonight.   Neighbors got together for some pre Easter shenanigans. Made a wide variety of pizzas. I only got two pics in all the action. I was cooking over 1000 degrees a few times. The ardore worked well. My dough seemed extremely tender and sticky tonight but we msde it. Only had 1 mini disaster.

The sausage and jalapeno pie is made with homemade sweet Italian bison sausage a buddy brought from his bison ranch. Good stuff

My oven bakes a little unevenly, as you can see. Itís a front and back thing. Itís not a great difference, somewhat over medium to somewhat under well. I like it that way.

5:35 at what the IR tells me is 615F on the bottom rack on clay tiles under pizza stones in my recalibrated electric home oven.

For six years I used the pan on the left exclusively. Recently, Iíve been experimenting with the pan on the right hoping to get an even better spring in the rim. I might be onto something.

My wife said she was running out of superlatives. I reminded her how desirable we pizza guys are and suggested she learn a new language or two. (The last sentence I kinda made up.)

Not exactly a pie, but using my standard pizza dough to make pita. Cooked on a pizza steel that was preheated under the broiler for 20 min to get to around 675 deg F. Rolled out to about 1/8 inch, and cooked for around 30 seconds (on the steel and under the broiler)...

Had a bunch of leftover pizza ingredients from last night. Decided to try an emergency NY style dough and cook it in the neglected Blackstone oven. I went with Essen1's emergency dough but I increased the TF to .090 and made a 14" pie. This was literally a "whatyagot" pizza thrown together with whatever was available. No planning...I occasionally eat some pizza with Ranch and hot sauce so I also decided to do a sauce test to see what I currently liked best. Not bad after a day of Spring yardwork and a few beers.
