It’s been 13 months since I last experimented with this dough or much of anything pizza related. Happy to be back in the saddle. This was a practice run for a family thing Friday. This did not start out to be so topping heavy but looks that way. It’s only 5 1/2 oz LMPS mozzarella and just under 2 oz white cheddar, sausage, mushrooms, and tomatoes. I had my eye on a purple onion at the store and did not buy it. That was dumb.


It’s the Apizza Scholls version in the dough generator (with oil). 25% of flour went in a poolish with 1/2 the IDY for 18-19 hrs. I used 15% WWW, which made it seem that 64% HR was a better way to go than 62%. Mixed, autolysed, added yeast, oil, and salt and mixed, left covered on counter 3 1/2 hrs with 4 SF at 45 min apart. Balled, oiled, and put in fridge in Tupperware with lid partially off 75 min, then covered in fridge for 24 hrs. Out at room temp today about 5 1/2 hrs. Baked in the Ardore. Plan was to launch about 750-775 then turn down to 650-675 for what I hoped would be about a 4 1/2 min bake. However, I had some serious fire management problems - it blew out 3 different times in 5 min. Windy here. So, the temps were all over the map and I had to keep the flame higher than I wanted to keep it lit. Total bake time was 5:10 such as it was. We like some char around the edge but not this much. I was happy with overall taste, the bottom, and top and interior of the edge (cornicione?).


Learned some things. Still love this formula and the addition of WWW.

Looks good to me!  ;)

Tiny oven that can barely fit 14" pizza         when I went to remove parchment paper (parchment on steel)  the pizza was stuck and i had to give it a bit of a pull where the dough was touching the back of the oven.

If you see the bottom of the pic its more well done and less round.

This is my BBQ pie (Sweet Baby Ray's sauce) and one half does not have onions.
So I cut square with onion and triangle without onions. Less fighting at the table  :D

My brother came over for dinner so i fired up the oven. This is a Pepe's inspired white clam pie from earlier tonight. Pizza was good but my clam shucking skills need a little work.

Thank you. Floor is in the 620 to 650 range. Dome is probably 800 or so. About a 3.5 minute bake.
