Well we had live training today.

The corporate trainer said mellow mushroom's dough is unique because it uses molasses! Mellow mushroom's 16" dough balls are huge, it's a light brown/tan in color, the dough is extremely strong, you really have to pull on it with force to stretch it out. Worker's from other pizza shops all agreed it was far stronger and stiffer than anything they've worked with.
The dough ought to get slacker by tomorrow.

They don't do edge stretching, they use corn meal and stretch and build directly on the peel.About their oven, i'm sorry, but I have to admit their conveyor oven with stone inserts puts out QUALITY pies. The bottoms and top are golden brown, rim has great oven spring and It's baked even as can be. Veggie pies with onions, green peppers, mushroom, and olives are no problem the oven handles it with ease. I forgot to see what cheese they use too.

Honestly, you can't tell it wasn't baked on a traditional deck oven.  Still hate how high maintenance the conveyor oven is though.

WoW MR - interesting and great effort in capturing all this details.
I'm interested to see your comparisons and opinions of a commercial pizza operation vs your home adventures.

It's different, it's a hot rocks oven, I don't know of a machine better engineered than this one. It's a unique oven because it uses 3/4 black granite as the baking surface.
Compared to the tiny turbo chef oven at Busch Gardens, this machine is FAR easier to take a apart.

Interesting - I had not see that one before - how long does it take for the pie to go from one end to the other - do they adjust top / bottom heat balance with the airflow or some other way? How hot will it go?

Supposedly 6 1/2 or 6 min from end to end, not sure of temp but it has to be over 500*F, it's probably the industry standard 550*f. They can adjust the top and bottom, top via airflow, stone via surface temp? I'm guessing.

I was a hater of the oven until I ate the pizza lol.

Once a pizza operation starts to grow in size and have a lot of units, it is very common to see them go to conveyor ovens because it is difficult to get and retain capable oven tenders. And the pizza volumes are too high for oven tenders. Most of the major pizza chains in the country, and many medium size chains as well, started out with deck ovens but eventually went to conveyor ovens. In some cases, pizza operators went with rotating ovens with stones/steel or ferris wheel type ovens. Even the places that made deep dish pizzas went to conveyors and the like. At least MM seems to be going with something that is in keeping with its deck ovens. MM also uses pizza screens at its locations with deck ovens. I assume that use will go away.

I agree, the mellow mushroom in my neighboring city, it's pizza wasn't crisp, and golden brown like ours. It was too pale and floppy. Deck ovens do loose their effectiveness at peak hours, conveyors are more resilient.

Mellow Mushroom shines in toppings and crust, if they switched to a better cheese, and stanilus 7/11 blended with Alta Cucina they'd be quite formidable. Some allow the purchase of dough balls, hopefully this location allows it too.

I wonder what are the advantages of a rotoflex vs stone conveyor?

The Rotoflex oven is considered an alternative to conveyor ovens with a supposed benefit of having the capability of producing the kinds of volumes that one might get using a conveyor oven. Its basic product uses a steel baking surface although it is possible to retrofit the steel with stones. By contrast, the basic Montague oven--one of the types used by MM in some of its locations--has stones but there is a steel option. The Rotoflex ovens are rotating ovens.

I am no expert on the advantages of a Rotoflex oven but I understand that a Rotoflex oven requires an experienced oven tender. That may be less true, or not true at all, with a conveyor oven with stones.

If you go to the Rotoflex website and click on Our Customers, you will see the commercial pizza operations that use the Rotoflex ovens. If you scan the list for Virginia, you will see the following list:

Virginia
La Villa Roma (Leesburg)
Liberty University (Lynchburg)
Philadelphia Cheesesteak (Alexandria)
Rubino's Pizzeria (Herndon, Ashburn)
Y Not Pizza (Chesapeake, Norfolk, Virginia Beach)

If one of the above pizzerias is near you, you may be able to check it out and learn something of value from the visit.

You are correct that some of the MM locations will sell dough balls. However, when I was trying to reverse engineer and clone the MM dough, I got conflicting information from MM employees on the dough balls weights for the different pizza sizes. So, as an employee, you might be able not only to purchase dough balls, but also ge them as gifts. And if that is the case, I would be interested in those different weights inasmuch as that is public information. In fact, I once called MM corporate on the dough balls weights and was referred to a local MM unit, which I did. Unfortunately, they gave information that later turned out to be wrong.

The above said, I would like to offer you some good advice. And that is to not disclose any proprietary MM information outside of MM. I suspect that you may have entered into a nondisclosure agreement with MM as part of the package of documents you signed as a new employee. Often, new employees just sign in the places they are told to sign and may not even know that they entered into a nondisclosure arrangement with the new employer. I recall one time giving the same advice to a new member who had disclosed very detailed trade secrets about the pizza place he worked at and how the dough was made and used. I gave him the same advice as I am giving you. As soon as he got my PM, he deleted all of his posts and closed his account with the forum and never returned.

Unfortunately, in today's climate where people leak or otherwise disclose private information without regard to the legal rights that the owners have in that information, private information often makes it into the public domain, including the Internet. I saw that in the case of MM in a couple of instances with MM company manuals. I saw the same thing with Pizza Hut, whose attorneys caught the disclosure and wrote to Steve, the owner of this forum, demanding that the documents in question be taken down from the forum, which he did. People who do these sorts of things should be fired or prosecuted, but often they are long gone after the disclosure or else the companies are unable to identify the miscreants.

Well I'll tread carefully from now on, I'll post some photos too. Albeit crude ones, I'm proud of this place, their pies are GBD.

I was taught how to stretch faster by a mellow mushroom veteran, this man can stretch a skin in what seems about 1 min or little  longer. I'll have to demonstrate one day, never saw such a method before.

I've memorized the mellow mushroom menu, if I don't buy this car friday, I'll buy a new pizza stone, broker with the landlord and put in a more powerful oven.
I can emulate their pizzas spot on now.
