Wednesday is dough day

Here Wednesday is dough day during pizza season. Dough for a pie Friday and another Saturday, November through May. And 54 grams of leftover dough for a pita tonight.

A few, simple ingredients. At first blush one might think the process for mixing them could be exhaustively covered in three or four short paragraphs. Lol!
There is no free pizza.

Sneak peek. Trying to hide behind the olive oil. No matter, the oven is itchy and fate is unrelenting.

I have to stand again for Zip Lock type bags for home use cold fermentation. Condensation has been cited as an issue. Not an issue. In the bag it looks worse than it is due to the beading effect of both the water and oil on plastic. I use less than a tablespoon of bench flour when opening a ball to a skin. Over pressuring is an issue Ive never encountered.

No Zip Lock type bag:

Get large Pyrex bowl out of cupboard.
Pour in a half tablespoon of oil.
Wasting a Select-a-Size, coat the inside of the bowl with the oil.
Roll the dough ball around in the bowl to oil lightly.
Get out the container and lid.
Lightly oil the container and lid.
Put the dough ball in the container.
Cover the container and put in fridge.
Wash Pyrex bowl.
Return Pyrex bowl to cupboard.
Some time later, remove the container from the fridge and the dough ball from the container.
Wash the container and lid.
Return container and lid to the cupboard.

Zip Lock type bag:

Get bag from cupboard.
Pour ~ 1/8 teaspoon oil. (This accommodates my 250 g dough ball in a 6.5 x 5.875 bag.)
Manipulate oil to coat the bag.
Place un-oiled dough ball in bag.
Put bag in fridge.
Some time later, remove the bag from fridge.
Shear open the bag with scissors. (This is strangely satisfying.)
Toss bag.
