flaxseed pizza ?
« on: April 17, 2019, 01:53:58 PM »
Greetings

I'm looking for a recipe to make pizza dough from ground flaxseed, no wheat flour, since I'm on a low carb diet for diabetes. I don't know if yeast can be used, since flaxseed has no gluten..
Maybe flatbread style pizza ? any ideas?
I'm a home baker.

I've been developing a low-carb yeast-risen pizza dough recipe that actually uses flaxseed meal as part of the "flour" mixture. It does use some other ingredients that may be hard to get where you are, though I'm not sure. If there's any ingredient you have a question about, just ask. You can use regular instant dry yeast instead of "pizza crust yeast", provided you use raw wheat germ (this allows the dough to stretch out more easily into a pizza shape). It does use a small amount of honey, which, along with the raw wheat germ, are the only fermentable ingredients in the mix. Since most of the sugars in those ingredients are consumed by the yeast, I'm not counting those as part of the overall net carb count.
