Looking for advice

The store/bakery I work at is toying with the idea of doing a take-and-bake type of program.  I was wondering if anyone had any advice regarding method, recipe, baking and so forth.  For example - is a refrigerated or frozen dough better?  What kind of crust works best?  Any pointers that could be passed along would be appreciated.  Thanks.
