bite to sauce

We went out for pizza last night in Scranton PA. this place sells tons of pizza, their take out business is excellent, it's funny they don't wear a cash register out in one night. cars parked all over even on the streets, their sauce has a nice bite to it, and I am not sure if it's a cooked sauce or not, but if they are using red pepper flakes to give it that bite, does it have to be cooked, or if they use hot sauce can it be added to the sauce without cooking. their pizza is cooked in 2 steps, they take it out of the oven and put it another over for about 2 minutes, I am not sure if it's a broiler type or just more heat, but it browns the toppings very nicely. the 2 ovens look the same side by side. is there a noticeably difference in the taste of the sauce between red pepper flakes or hot sauce added to the sauce to give it a little bite
