NYish style pizzas

Roberta's NY Types dough (50% APF/50% 00) and a little oil, salt and yeast of course.

Kenji's NY style sauce. Kosher moz from costco.

550 on a pizza stone in the oven

They were pretty good. I would have liked to get the crust a bit darker.. I assume that had to do with the 00 flour and not enough heat?

Yes.  It may also be taking extra time to get it that brown - which would make it tougher/more crackery.   Try it with no 00 or much less and I think you will be happier.
