How long can I let a dough rise in the fridge before I'm tempting the fate of taste?

Depends on how much yeast you are using and how much flavor you want. Do you like sourdough bread?

And the final dough weight?  Also how long was the dough out at room temps before it went into the fridge?

20-24z depending on the recipe.
as soon as I'm done mixing, it goes in the fridge.

It should last 3-4 days but you need to watch the bubbles form through the bottom of thne container. Hopefully you use a see through container.
