Make dough the same day as pizza?

I am attempting to make a deep dish pizza.  I keep reading to refrigerate dough overnight, then let it sit out the next day.

Is there a reason for this?  I made the dough earlier today, but would like to try the pizza tonight.  Will that impact the taste/consistency?

There a several different fermentation methods people use. Some people prefer a same day dough. If your recipe was a same day dough, bake that pizza tonight and enjoy. Later try out an extended cold fermentation.
